Deep-Dish Pizza Pan
A tall-sided round pan for baking thick Chicago-style deep-dish pizza.
A deep-dish pizza pan is a round metal pan with high straight sides, usually a couple of inches deep, made for Chicago-style pizza. The dough is pressed up the walls to form a deep crust that holds a generous layer of cheese, fillings and chunky sauce on top. The heavy pan and oiled sides give the crust its signature fried, golden edge.
The deep-dish pizza pan is defined less by brand than by geometry: a round pan with straight, near-vertical walls at least 2 inches tall and a flat bottom, sized anywhere from 9 to 14 inches across. It was developed in tandem with Chicago deep-dish pizza at Pizzeria Uno in 1943, when Ike Sewell and Ric Riccardo needed a vessel tall enough to hold a layered, inverted pie—cheese on the bottom, sauce on top—that would simply collapse on a flat sheet. The walls do most of the structural work—the classic Uno's pie uses roughly 2 pounds of dough in a 14-inch pan, while a 12-inch pan holds about 8 to 10 cups of filling—while the flat bottom provides a stable base for the par-bake that sets the crust before wet fillings go in.
Material matters as much as shape. Heavy-gauge aluminum dominates home kitchens because it heats fast and evenly, minimizing the hot spots that would scorch a thick crust while leaving the center underdone. Traditional pizzerias, by contrast, typically rely on heavy cast-iron deep skillets for their heat retention and crust character. Dark, anodized, or cast-iron pans brown more aggressively than bright aluminum, which is why recipes typically call for a 25°F temperature drop when switching materials. Thinner disposable pans and silicone pans are poor substitutes for a properly loaded pie: the disposables buckle under the weight, and silicone tops out below 450°F while producing a soft, pale crust that doesn't match the style.

The par-bake: the step that makes or breaks a deep-dish pie
The single biggest difference between a crisp, sliceable deep-dish pizza and a gummy, soggy one is the par-bake—the short initial bake of the bare crust before any wet fillings are added. A filled deep-dish pizza needs 40 to 60 minutes in the oven; if the raw dough goes in under wet cheese, sauce, and toppings, steam from those ingredients penetrates the crust before it has a chance to set, leaving the bottom pale and flabby.
- Dock the rolled-out dough with a fork across the bottom (not the sides) to keep the base flat while leaving the side crust free to rise and grip the filling.
- Bake the bare crust at 425°F (220°C) for 8 to 12 minutes, just until the surface looks dry and the edges have a faint tan.
- Pull, cool for 2 minutes, then layer cheese, toppings, and finally sauce; the par-baked shell will finish cooking through during the longer second bake.
- For a darker, crunchier bottom, finish on a preheated pizza stone or steel on a lower rack during the main bake.
Choosing the right material for your kitchen
Material choice is a trade-off between browning, weight, and maintenance. Most home cooks do best with a heavy-gauge aluminum pan; it heats predictably, is light enough to lift when full, and is the closest match to traditional Chicago-style results. - Aluminum (1–2 mm): fast, even heat; standard for most recipes; the easiest material to learn on.
- Dark or anodized steel: browning is more aggressive—drop oven temp about 25°F and check the bottom early.
- Cast iron: superb crust and retention, but a fully loaded 14-inch pan can reach 15 lb or more; season before first use.
- Carbon steel: cast-iron performance at half the weight; still requires seasoning.
- Silicone: easy release but pale, soft crust and a lower temperature ceiling; better suited to chilled desserts than to true deep-dish pizza.
- Disposable aluminum: fine for a small cheese pie, risky for heavily loaded larger pies—walls buckle and leak.

- Oil the sides more generously than the bottom—cheese and toppings bake directly against the walls and will cling if under-greased; softened butter blended with a little oil gives the best flavor and browning.
- Press the dough up the sides as well as across the bottom; the side crust is structural and needs even thickness, about ¼ inch (6 mm).
- Par-bake the crust at 425°F for 8 to 12 minutes until just set and lightly golden before adding wet fillings; this prevents a gummy, underdone bottom.
- Layer in reverse Chicago order—crust, cheese, toppings, sauce last—so the sauce on top shields the cheese from burning during the long bake.
- Bake on a lower rack or on a preheated pizza stone or steel to drive heat into the bottom of the pan and crisp the base.
- Reduce oven temperature by about 25°F compared with a thin-crust recipe; thick fillings need longer at lower heat to cook through without scorching the crust.
- Let the pizza rest 8 to 10 minutes after baking before slicing, or the cheese and sauce layers will run like lava and the slices won't hold their shape.
- Avoid very thin disposable pans for heavily loaded pies; they buckle, leak grease, and make the pie impossible to lift safely.
