An instant-read is built for quick checks, not to sit in the oven (the dial and electronics aren't meant for sustained heat). Probe the thickest part, wait for the reading to stabilize, and pull it out. A thin tip matters: it reaches the true center of thin foods and leaves a smaller hole for juices to escape.

Tips & pitfalls

  • Push the tip to the very center of the food, then ease back slightly if numbers jump.
  • Check several spots on a big roast and trust the lowest reading.
  • Verify accuracy in ice water (0°C / 32°F) every so often.
  • Use it on bread too — soft, enriched loaves finish around 88–93°C internal, while lean crusty loaves and sourdough want 96–99°C (205–210°F); too low leaves a gummy crumb.
  • A waterproof, backlit model survives a busy, messy kitchen far longer.
