Polycarbonate Chocolate Mold
A rigid clear plastic mold that gives molded chocolates a high-gloss professional shine.
A polycarbonate chocolate mold is a hard, transparent tray with precisely shaped cavities used by chocolatiers to cast bonbons, bars, and pralines. Tempered chocolate is poured in, scraped level, and chilled, and the smooth rigid surface releases pieces with a mirror-bright finish that flexible silicone cannot match. The clarity also lets the maker see whether each cavity is properly filled and set before unmolding.
A polycarbonate chocolate mold is a rigid, transparent plastic sheet — most commonly 275 × 135 mm — precision injection-molded with shallow cavities polished to a true mirror finish. That optical polish is the entire point of the tool: chocolate poured into the cavity takes a perfect impression of the surface, so the shell emerges with the deep, glassy gloss that defines professional molded confectionery. Polycarbonate largely replaced tin and aluminum in serious pastry kitchens through the second half of the twentieth century because no other common mold material matches its combination of optical polish and longevity across hundreds of cycles.
The plastic is a food-grade thermoplastic with a softening point well above any working chocolate temperature, so it tolerates dark chocolate tempered at 30–32 °C, milk or white at 29–30 °C, and even brief contact with warm caramel or pectin without deforming. It is far more rigid than PET, glossier and longer-lived than silicone, and lighter than metal. A well-kept sheet can be reused several hundred to over a thousand times, producing chocolate walls roughly 2–3 mm thick with crisp detail and a flawless surface — provided the cavities are kept clean, dry, oil-free, and scratch-free.
The flip side is genuine: once the polish is marred by abrasion, solvents, or a single dishwasher cycle, the shine it produces is permanently compromised, and the mold has to be retired. Working temperature discipline is equally important — chocolate poured too cool thickens before the cavity is fully coated; poured too warm it thins too much and the resulting shell is weak. The mold's polish is essentially a stamping die for shine, and anything that reduces surface tension at the chocolate-to-plastic interface — water, oil, dust, scratches — is the chief cause of dull, streaked, or bloomed chocolates.

The Filled-Bonbon Workflow
Polycarbonate molds are most often used to make filled bonbons with a thin, glossy tempered shell. The sequence below is the standard approach in professional pastry kitchens, and each stage has a specific reason tied to how chocolate behaves against a polished surface.
- Polish every cavity with a clean cotton pad or lint-free microfiber cloth, optionally with a drop of isopropyl alcohol, to remove dust and any static charge.
- Deposit well-tempered chocolate onto the mold — dark at 30–32 °C, milk and white at 29–30 °C — using enough to flood all cavities when spread.
- Tap firmly on the bench several times, rotating the mold 90° between taps, to drive chocolate into fine detail and release trapped air bubbles against the polished wall.
- Invert the mold over a bowl or scrap container to drain excess chocolate, then scrape the back of the sheet flat with a bench scraper so the finished shell has a clean, even base.
- Let the shell set partially — firm at the edges but not yet fully hardened — before piping ganache, caramel, or fruit-paste insert into each cavity.
- Seal the base by piping or spreading a thin layer of tempered chocolate over the insert, then scrape flat again.
- Cool fully at 16–18 °C, ideally inverted on a rack or clean towel to keep condensation droplets from spotting the back of the chocolate.
- De-mold by flexing the sheet gently away from the cavities; the shells should drop cleanly without prying.
Common uses
Tips & pitfalls
- Polish each cavity with a clean cotton pad or lint-free microfiber cloth before every pour — a fingerprint or speck of dust becomes a visible dull spot on the finished shell.
- Never touch the cavity with bare fingers: skin oils disrupt surface tension and cause fish-eyes or dull patches in the chocolate.
- Make sure the mold is bone-dry before pouring; a single drop of water will seize the chocolate and dull or streak the shell.
- Cool filled molds inverted on a rack or clean towel at 16–18 °C; cooling face-up invites condensation droplets to fall onto the back of the chocolate as it warms the air above it.
- De-mold by flexing the sheet gently away from the cavities; prying with a knife or metal tool scratches the polish and ruins future shells.
- Wash only by hand with warm water, mild soap, and a soft sponge; dishwashers, abrasives, and solvents will haze the surface permanently.
- Store flat, never on edge — long-term edge storage bows the sheet so chocolate no longer sits evenly in the cavities.
- Replace any mold with visible scratches, hazing, or warping; once the polish is compromised, the shine will not return.
