Graded Mesh Sieve Set

A graded mesh sieve set is a group of sieves with different mesh fineness used to sift dry ingredients and strain liquids to varying clarity. Coarser screens aerate flour and catch lumps; finer ones produce silky purées, custards, and clear stocks. Using them in sequence grades a mixture by particle size, useful in baking and refined cooking.

A graded mesh sieve set is a nested series of round strainers fitted with woven wire or nylon screen, each one cut to a precise aperture size so that what passes through changes as you move down the stack.   • Tap the rim, never the mesh, to push material through; pressing on the screen stretches and deforms it.
