Why press tofu
Tofu is packed in water, and that moisture stops it browning, makes it spit in hot oil, and blocks marinade from soaking in. Pressing it out concentrates the texture so it sears and crisps and absorbs flavor like a sponge. Use firm or extra-firm tofu for this — silken tofu is too delicate to press and is for soups and desserts.
