Clay Water Pot / Filter (Canari)
A porous earthenware vessel that stores, cools, and naturally filters drinking water.
A clay water pot, known as a canari in parts of West Africa and the Caribbean, is an unglazed earthenware vessel that holds water for cooking and drinking. The porous clay allows slow evaporation through its walls, which cools the water and sediment settles to the bottom, gently filtering it. It keeps water cool without refrigeration and imparts a clean, earthy taste.
The clay water pot is one of the oldest pieces of kitchen equipment still in active service: a vessel of unglazed, low-fired terracotta whose walls are deliberately porous. Unlike a glazed jug, the clay is left open so that water slowly migrates through the wall, evaporates from the outside, and draws heat out of the liquid inside. This is the same evaporative cooling principle that keeps an unglazed clay vessel cool in a desert courtyard, and it is why these pots remain popular across the Mediterranean, North Africa, and South Asia where thermometers regularly top 35°C (95°F). A well-made canari or matka will hold drinking water at roughly 10–15°C (18–27°F) below ambient on a dry, breezy day, with no electricity. The trade-off is that a little water is sacrificed to the air: the outside of the pot is damp to the touch and a small puddle forms beneath it. The clay also lends a faint minerality to the water — a slight alkalinity and earthy softness many cooks prefer to chlorinated tap. New pots must be cured by soaking for several days before use, both to leach loose clay dust and to let the pores close evenly.
For cooks, the pot earns its place for more than table service. Cool, clay-conditioned water is excellent for hydrating bread doughs and yeasted batters in warm kitchens, for rinsing grains, for bedside drinking water, and as the upper half of the classic Indian two-pot filter, where gravity drips water through a layer of charcoal and sand into a glazed catchment pot below. Treat it as a long-lived kitchen object — most improve with age as the interior develops a smooth patina.

How evaporative cooling works
The cooling effect is not magic; it is basic thermodynamics with a useful twist. Water inside the pot migrates outward through the network of micro-pores in the clay wall, reaches the outer surface, and evaporates into the surrounding air. Evaporation requires a great deal of energy — roughly 540 calories per gram of water — and that energy is drawn as heat from the water remaining inside, dropping its temperature. The drier and more moving the air around the pot, the faster evaporation proceeds and the colder the water becomes. A pot in a still, humid corner will barely cool at all; a pot in a cross-breeze on a dry day can hold water near 15°C below ambient. Two practical consequences follow directly: the outer surface stays damp and sweats, leaving a small puddle under the pot, and a meaningful amount of water is lost to evaporation and must be topped up daily.
- Set the pot in a drafty, shaded spot — moving air across the wet surface is what does the cooling, not shade alone
- Expect and plan for a puddle: rest the pot on a stone slab, terracotta saucer, or wooden board, and wipe up daily to protect the surface beneath
- Refill regularly; a pot that is allowed to stand dry for long periods can craze or crack the clay

Tips & pitfalls
- Cure a new pot by filling it with water and changing the water daily for 3–7 days, until the runoff is clear and the water tastes clean; this settles the pores evenly and prevents the gritty, dusty flavor of the first week
- Never use soap or dish detergent on the inside — it leaves a film that clogs the pores and taints the water; rinse with plain water and, if needed, scrub with coarse salt or a paste of baking soda and water
- Keep the pot in a drafty, shaded spot; a still, hot corner almost defeats the cooling, while a cross-breeze on a dry day can nearly double the temperature drop
- Top up rather than emptying the pot completely when you can; a wet clay wall cools the remaining volume continuously, and the pot comes back to a cool temperature faster after a top-up than after a long dry-out
- Refill with cool, not ice-cold, water; extreme temperature shock can craze low-fired clay and shorten the pot's life
- Expect a small puddle beneath the pot; set it on a stone slab, terracotta saucer, or wooden board and wipe up daily to protect wood and stone counters
- If the water develops a sour or off smell, soak the pot overnight with a few tablespoons of baking soda, then rinse thoroughly and air-dry in the sun before refilling
- In hard-water areas, mineral deposits will gradually narrow the pores; an occasional long soak in diluted white vinegar followed by thorough rinsing restores flow — but only if the pot is unglazed on the outside as well as the inside
