Tahdig Nan
Also: Bread Tahdig, Tahdig-e Nan, Lavash Tahdig
A variant of Persian tahdig in which a sheet of flatbread (lavash) is laid in the bottom of the rice pot, frying into a golden, crisp bread crust beneath the steamed rice.
Identity criteria
- 1The crust is made from flatbread, not rice or potato
- 2Lavash (or similar thin bread) lines the buttered/oiled pot base
- 3Steam-cooked under a mound of basmati rice (the dam stage)
- 4Yields a flat, shatter-crisp golden bread crust inverted and served whole
- 5It is a form of tahdig — the prized bottom-of-pot crust of Persian rice

Technique
- Lining the pot with flatbread

Substitutions
Lavash → Tortilla or other thin flatbreadadmissible
Acceptable stand-in that still crisps
Butter → Neutral oiladmissible
Crisps fine but with less richness
Flatbread base → Potato or plain rice baseinadmissible
Then it is potato tahdig or rice tahdig, not nan tahdig
Common mistakes
- Too little fat so the bread sticks and burns instead of crisping evenly
- Heat too high, scorching the bread before the rice steams
- Skipping the dam/steam stage so rice stays undercooked
- Pot not inverted cleanly, tearing the crust
