Ají Cleaning & Seeding (Vein Removal for Heat Control)

The Peruvian technique of splitting, seeding, and scraping the white inner veins from ají peppers to calibrate capsaicin heat while preserving the flesh's vivid color and fruity flavor.
Ají peppers (most commonly ají amarillo, ají limo, ají panca, and ají rocoto in Peruvian cooking) concentrate the majority of their capsaicin in the placental tissue — the whitish inner veins and the membrane connecting them to the seeds, not in the seeds themselves. Cleaning involves halving or slitting the pepper lengthwise, removing seeds by hand or knife tip, then scraping the white vein tissue with the flat of a knife, a spoon, or gloved fingers. Partial vein removal allows stepwise heat modulation without altering the pepper's characteristic flavor profile.

Where it comes from
Fresh or soaked dried ají peppers — specific anatomy: the capsaicin is concentrated in the inner pericarp placenta and vascular bundles (veins), not the seeds. Ají amarillo placenta can reach 30,000–50,000 SHU; removing it drops the effective heat significantly while the fruit wall's aromatic compounds remain intact.

How to cook it
- 1Wear nitrile gloves when working with high-Scoville varieties (ají limo, ají rocoto) — capsaicin transfers to eyes and mucous membranes hours after contact.
- 2For fresh ají amarillo or ají limo: hold the pepper stem-end up, insert a paring knife at the shoulder, and slit lengthwise from shoulder to tip without cutting the stem end.
- 3Open the pepper flat by pressing it down. Scrape the seeds out with the knife tip or a teaspoon.
- 4Identify the white placental tissue (inner veins) running from the shoulder to the tip. Use the tip of a paring knife or a spoon to scrape these away — work from the inside toward the flesh wall, stopping before you puncture the fruit.
- 5For ají rocoto (thick-walled): halve completely, remove seeds, then use a melon baller or spoon to scoop vein tissue. Rocoto veins are dense and tightly adhered; soak the cleaned halves in salted water for 30 minutes to further reduce heat after deveining.
- 6For partial heat retention (ceviche): remove seeds only; leave some vein tissue for bite.
- 7For paste making (ají amarillo pasta): blanch cleaned ají 2–3 times in boiling water, changing the water each time, to reduce residual capsaicin before blending. This produces the mellow orange paste used commercially.
Prep & butchery
- Always glove up for ají limo, ají rocoto, and ají charapita — their heat is genuinely disabling on bare skin.
- Soaking rocoto halves in changes of salted water (three soaks, 20 minutes each) is the traditional Peruvian method for reducing heat without blanching.
- Blanching in water (2–3 times for ají amarillo) reduces capsaicin diffused into the flesh — used when making commercial-style paste for ají de gallina. Skip for ceviche applications where the pepper is used raw.
- Vein removal is progressive — a cook can remove half the veins for medium heat. Taste as you go; the difference between partial and full deveining is significant.
- The bright orange color of ají amarillo is water-soluble and will leach into soaking water; limit soaking time if color retention is important (anticuchos garnish).

Capsaicin location myth
The widespread belief that heat lives in the seeds is false. Capsaicin is synthesized by the placenta (inner vein tissue) and diffuses outward onto the seeds by contact — the seeds themselves contain little capsaicin. Removing only the seeds and leaving the veins intact barely reduces heat. Full deveining is the only effective approach to significant heat reduction.
Ají panca special case
Ají panca (the dark, smoky-fruited dried pepper central to anticuchos) is almost always used dried and rehydrated, not fresh. Its heat is very low, making vein removal optional. However, removing the seeds and stems before rehydrating speeds the softening and removes slight bitterness from the dried seeds.
Commercial pasta de ají
Commercial Peruvian ají amarillo paste is produced by blanching deveined, seeded peppers 3–4 times, then blending to a smooth purée. The repeated blanching strips the sharp bite while preserving the characteristic fruity flavor and electric orange color. Home cooks can reproduce this by blanching cleaned peppers twice (5 minutes per blanch, fresh water each time), then blending with a little oil.
