Fine brunoise (brunoise fine or très fine) halves each dimension to 1.5 mm × 1.5 mm × 1.5 mm — approaching the limit of practical hand-cutting — and is reserved for delicate sauces, cold canapé preparations, and contexts where the cut must nearly dissolve into the dish while still contributing texture. How to cook it

  1. 1Begin with a squared vegetable block (parade): slice flat faces on all four long sides to form a rectangular solid.
  2. 2For standard brunoise: slice 3 mm planks, stack and align, cut lengthwise into 3 mm julienne sticks, then cross-cut at 3 mm intervals to produce 3 mm cubes.
  3. 3For fine brunoise: repeat the same sequence at 1.5 mm — planks, julienne, cross-cut. A flexible, razor-sharp blade with a very thin spine helps prevent the sticks from sliding.
  4. 4Cook standard brunoise in clarified butter over medium heat, 2–3 minutes until just soft but still holding shape.
  5. 5Cook fine brunoise in whole butter over gentle heat, 30–60 seconds; it will soften and begin to melt into the butter — this is intentional for sauce applications.
  6. 6For raw applications (vinaigrette, mignonette), rinse fine brunoise of onion or shallot briefly in cold water to mellow sharpness, then pat dry.

Prep & butchery

  • Knife sharpness is more critical at brunoise scale than at any other — test on printer paper before beginning.
  • Chill firm vegetables (carrots, turnips) for 20 minutes before cutting; cold vegetables are firmer and resist crushing under the blade.
  • Keep the julienne sticks tightly gathered and aligned before the final cross-cut — even a small shift produces irregular cubes.
  • For fine brunoise specifically, use the tip-and-heel rocking motion minimally; a single vertical push-cut per stroke is more accurate at 1.5 mm scale.
  • Work in small batches: fine brunoise from a single medium carrot is typically sufficient for a sauce for four portions.

Substitutes

  • Minced/hachée

    Irregular finely chopped pieces that approximate fine brunoise in flavour contribution but lack the geometric uniformity; appropriate for rustic preparations where appearance is secondary.

  • Macédoine (1 cm dice)

    The next size up in the French dice hierarchy; suitable when a more prominent vegetable presence is desired.

  • Julienne (left uncut)

    The parent cut; can substitute where a slightly elongated form is acceptable and the extra cross-cutting step is impractical.

Choosing Between Standard and Fine

The practical distinction is one of presence versus imperceptibility. Standard brunoise (3 mm) is large enough to be seen as a distinct element in a consommé or compound butter — it provides both visual character and a slight textural note in each bite. Fine brunoise (1.5 mm) is below the visual threshold in a finished sauce; it integrates rather than stands apart, contributing flavour and body without announcing itself. When a cook wants a vegetable's flavour in a sauce without its texture, fine brunoise sautéed in butter until nearly translucent achieves that result more precisely than mincing, which produces uneven particle sizes and more cell damage.

The Role of Parade Trim

Both brunoise sizes require squaring the vegetable first, which discards the rounded exterior. At brunoise scale, the trim constitutes a large percentage of the starting vegetable — sometimes 50% for an irregular carrot. Professional kitchens use every trim for stock, soup base, or mirepoix. Culinary students sometimes resist the parade step; instructors rightly insist on it because irregular starting cross-sections are the primary cause of non-uniform brunoise, and non-uniform cubes mean uneven cooking.
