Injera batter is ready after 2–3 days of fermentation when it smells pleasantly sour, shows fine surface bubbles, and pours to a smooth, crepe-like viscosity.

Injera, the East African fermented teff flatbread, requires a batter fermentation of 2–3 days (sometimes up to 5 days for a more sour result) before cooking. The fermentation is driven by a complex community of wild organisms from the teff grain, water, and — in traditional practice — a starter called ersho (reserved liquid from a previous fermentation batch). Peak fermentation is not defined by a single temperature or pH reading but by a convergence of visual, olfactory, and textural cues: a pleasantly sour aroma, small CO₂ bubbles across the surface, and a viscosity that flows easily but holds its shape briefly when tilted. Over-fermented batter becomes excessively acidic, producing injera with an unpleasant sharpness and compromised structure.

What happens

Teff contains naturally occurring LAB (primarily Lactobacillus species) and wild yeasts on the grain surface. During fermentation, yeasts ferment sugars to CO₂ and ethanol, producing visible gas and leavening power. LAB produce lactic and acetic acid, dropping pH from near 6.0 to approximately 3.4–3.8 in a fully soured batter. Starch granules swell and partially gelatinize, shifting viscosity from a thin slurry to a pourable, slightly viscous batter. The protein network in teff (which lacks gluten) develops loosely, relying on the bubble structure and acidity to create injera's characteristic bubbles (the 'eyes') during cooking. Traditional preparation often involves a partial cook of some batter (absit) added back in — a step that further modulates viscosity and leavening.

What to look for

  • Batter surface shows a dense, fine carpet of small CO₂ bubbles
  • Aroma is sour and slightly funky — complex, not sharp or off-putting
  • Batter pours in a slow, ribbon-like stream — neither watery nor paste-thick
  • Slight doming at the center of the container if undisturbed for several hours
  • Taste is distinctly sour with a mineral earthiness from the teff
  • Color has deepened slightly and the batter has homogenized from the initial gritty texture

How to check

  • Lift a spoonful and watch it fall — it should pour in a steady ribbon, not splash or blob
  • Smell the batter: a clean, tangy-sour aroma signals readiness; a sharp acrid smell means over-fermentation
  • Pour a small test circle on a hot mitad (injera griddle) — 'eyes' (bubbles) should appear immediately and uniformly across the surface
  • Taste a small amount of batter: sour and earthy without being harsh

Food safety

Injera batter acidity (pH 3.4–3.8 at peak) provides significant protection against pathogens. The batter is consumed after cooking at high temperature (mitad surface 200–220°C), which eliminates any residual risk. Batter stored past peak at room temperature will continue to acidify and should be refrigerated to halt fermentation and used within 24–48 hours.

  • Ersho (starter)

    Traditional teff starter liquid saved from a previous batch; inoculates the new batter with established LAB and yeast communities for more reliable fermentation

  • Absit technique

    A portion of fermented batter is briefly cooked then stirred back in; gelatinized starch modifies viscosity and adds leavening complexity

  • Mitad (griddle)

    The large clay or metal griddle used for injera cooking; surface temperature of 200–220°C creates the characteristic 'eyes' as CO₂ from the batter expands rapidly

  • Teff flour

    Fine-ground whole teff produces a darker injera with deeper sour flavor; cracked teff takes longer to ferment evenly and may produce a more textured result

Climate and timing

In Ethiopia's highlands, the dry season and ambient temperatures of 22–26°C are ideal for a 72-hour ferment. In humid tropical climates or heated kitchens above 28°C, fermentation can complete in 48 hours — monitoring by cue is more reliable than clock-watching. In cold apartments below 20°C, a 4–5 day ferment may be required.

Whole teff vs. teff flour

Traditional injera uses whole or cracked teff soaked and fermented, then milled during or after fermentation. Commercial diaspora recipes substitute pre-ground teff flour, which ferments faster (greater surface area) but may produce a smoother, less complex flavor profile. Some bakers blend teff flour with small amounts of barley or self-rising flour to improve the eye structure when teff quality is variable.
