American Buttercream

The most widely used buttercream in American home and professional kitchens. A mechanically aerated fat-sugar emulsion made by creaming butter with powdered sugar and a small amount of liquid until light and fluffy. Unlike Italian or Swiss meringue buttercreams, it contains no cooked components or meringue base — it relies entirely on the creaming method for volume and structure. The result is a highly sweet, very spreadable frosting with a matte finish that develops a light crust on exposure to air.

The formula

1 part butter : 2 parts powdered sugar (by weight), plus 1–2 tbsp liquid per 250 g butter

The 1:2 fat-to-sugar weight ratio is the non-negotiable foundation. Reducing sugar significantly weakens the structure; exceeding it risks a gritty texture if crystals fail to dissolve fully. Liquid is a consistency adjustment, not a structural component.

Ingredients

Method

  1. 1Bring butter to 18–20 °C (room temperature). Cut into 2-cm cubes and beat in a stand mixer fitted with the paddle attachment at medium speed for 1–2 minutes until completely smooth and pliable.Butter must be soft enough to trap air during creaming but firm enough to hold the sugar crystals. At 18–20 °C it is in the optimal plastic state — the fat crystals are organized to entrap air pockets and the sugar will be incorporated without crushing it into the bowl walls.
  2. 2Add all the powdered sugar at once. Begin mixing on low speed (stir) to incorporate the sugar into the butter without creating a sugar-dust cloud, then increase to medium-high and beat for 5–7 minutes continuously.The high-speed beating after initial incorporation is the creaming phase — the sugar crystals act as an abrasive, forcing air into the butter's fat matrix. This builds the initial volume and lightness. The extended beating develops a stable foam structure with thousands of tiny, evenly distributed air cells.
  3. 3Stop the mixer and scrape down the bowl and paddle thoroughly. Add the vanilla extract and milk or cream. Beat on medium-high speed for 2–3 more minutes until the liquid is fully incorporated and the frosting is noticeably lighter and fluffier.Scraping ensures no unmixed butter pockets remain at the bowl walls. The liquid lubricates the sugar crystals and partially dissolves their surfaces, creating a smoother, more cohesive emulsion. Continued beating re-aerates after the liquid breaks the initial foam temporarily.

Creaming method

The foundational aeration technique for this frosting. Beating fat and sugar together at moderate speed traps air in the fat crystal matrix, creating a stable foam without egg proteins or starch thickening.

Incremental addition (of liquid)

Liquid is added all at once in American buttercream (unlike French buttercream), because the base is fat rather than egg yolk — there is no risk of scrambling. The single addition avoids over-thinning.

Final high-speed beat

Re-aerates the frosting after liquid incorporation and develops the plastic, pipeable body characteristic of a well-made American buttercream.

Crusting

Allowing frosted cakes to sit uncovered for 30–60 minutes allows the surface to dry to a light crust. This 'crusting buttercream' holds sharp edges on decorated cakes and is uniquely characteristic of American-style buttercream.

Variations & derivatives

Pure Butter Shortening American ButtercreamUnited States (commercial/piped decorations)

Substitute all butter with hydrogenated vegetable shortening (e.g., Crisco). Produces a whiter, more heat-stable frosting that holds sharp piping at room temperature. The trade-off is a distinctly waxy mouthfeel and zero butter flavor. The standard for wedding cake decorators before European butter became ubiquitous.

Half-Butter, Half-ShorteningUnited States

Equal blend of butter and shortening as a compromise between flavor and stability. Most common in professional American bakeries that need heat tolerance without sacrificing taste entirely.

Whipped American ButtercreamUnited States

After initial mixing, continue beating at medium-low speed for 5–8 additional minutes. This develops an even lighter, more mousse-like texture with significantly more trapped air — a modern preference for cupcakes and lighter applications.

Chocolate American ButtercreamUnited States

Sift 60–90 g Dutch-process cocoa powder into the butter-sugar mixture before adding liquid. The cocoa powder partially replaces powdered sugar as both a flavor and structure component, requiring a slight reduction in sugar and additional liquid to maintain consistency.

Brown Butter ButtercreamUnited States

Brown the butter completely (noisette step), cool to room temperature, then proceed with the standard method. Maillard reactions in the browned milk solids add toasted nuttiness and caramel depth. Requires careful cooling to 18–20 °C before adding sugar or the emulsion will break.

Troubleshooting

Frosting is grainy or sandy on the tongue

Insufficient creaming or sugar not fully dissolved. Powdered sugar must be beaten long enough that the crystals are partially dissolved into the butter fat matrix, not merely suspended.Re-beat the frosting at high speed for 3–5 minutes. If graininess persists, pass the finished frosting through a fine-mesh sieve — this is tedious but eliminates undissolved crystals.

Frosting is too soft and will not hold peaks or crust

Butter was too warm (above 24 °C), or too much liquid was added. The fat matrix has melted and cannot hold its aerated structure.Refrigerate the frosting for 30–45 minutes until firm but still pliable. Re-beat briefly at medium speed to restore some air. If too soft still, add powdered sugar 1 tbsp at a time, re-testing, until it holds peaks.

Frosting weeps liquid or appears 'sweaty'

Too much liquid in the formula, or the powdered sugar was not fully incorporated before liquid was added. The excess moisture separates out as free liquid on the surface.Add powdered sugar 1 tbsp at a time, beating well after each addition, until the weeping stops. Store at a cooler temperature to slow moisture migration.

Frosting curdles or separates during mixing

Liquid was added too quickly or the butter was too cold when liquid was introduced. Cold butter cannot absorb liquid smoothly and the emulsion temporarily breaks.Reheat the mixing bowl in a warm water bath by a few degrees (body temperature to 21 °C), then beat vigorously at medium-high speed. Alternatively, add 2–3 tbsp additional powdered sugar to re-thicken the matrix and re-emulsify.

Storage

Keeps 2–3 days at room temperature (airtight container); up to 2 weeks refrigerated; up to 3 months frozenPress a sheet of plastic wrap directly onto the surface of the frosting in an airtight container to prevent a skin from forming. For frozen portions, scoop into portions and freeze on a sheet tray, then transfer to a zip-lock bag. Reheat: Refrigerated: let stand at room temperature for 1–2 hours until pliable, then re-beat on medium-high speed for 2–3 minutes until fluffy. Frozen: thaw overnight in the refrigerator, then reheat and re-beat as above. Never use direct heat to melt frosting.
