This is not simply softened onions — it is a fundamental flavor base built from time and controlled heat.

The formula
1000 g onions : 60–80 g fat (butter, oil, or rendered fat) : 4–6 g salt
Fat is 6–8% of onion weight — enough to coat and lubricate, not to fry. Salt is added in stages. True caramelization requires 45–90 minutes at 120–140 °C for a full mahogany result.
