Caramel Cream

The formula

1 part sugar : 1 part heavy cream (by weight); butter added off-heat at 15–20% of sugar weight

100g sugar + 100g cream + 15–20g butter is a reliable small batch. Water is ~10% of sugar weight for initial dissolution only; most evaporates during cooking. Salt at 0.5–1% of sugar weight is essential for stability and flavor depth.

Method

Wet caramel method

Dissolving sugar in water before caramelization produces more even browning, easier color control, and a smoother final sauce than dry caramel. It is the standard professional approach.

Temperature control

Sugar caramelizes rapidly between 160–180°C. Using a candy thermometer removes guesswork; pulling at the right color moment is the defining skill.

Emulsification

Adding fat (butter, cream) to a hot sugar solution creates an emulsion where sugar and water are suspended in fat, giving caramel sauce its characteristic smooth, pourable texture and glossy appearance.

Variations & derivatives

Salted CaramelFrance (Brittany, widely universal)

Increase salt to 1.5–2% of sugar weight. Add fleur de sel as a finish for textural contrast. This is the most common modern form of caramel cream.

Dark / Bitter CaramelUniversal

Cook to 185–190°C (dark brown). Higher bitterness balances richer creams, chocolate desserts, and ice cream. Reduce cream slightly for pourability.

Spiced CaramelMexico, Central America

Caramel au beurre saléFrance (Vendée, Poitou-Charentes)

The iconic French salted butter caramel. Use 50/50 butter and cream relative to sugar by weight, with proper sea salt. Produces a thicker, fudgier consistency than standard sauce.

Piloncillo CaramelMexico

Substitute unrefined cane cones (piloncillo) for white sugar. Has molasses depth and smoky notes. Cook with water first, then finish with cream and butter.

Troubleshooting

Grainy or crystalline texture

Seized or clumped when cream added

Too thin or runny after cooling
