Chhurpi
Chhurpi · A traditional fermented, acid- and heat-coagulated pressed cheese of the Himalayan highlands (Nepal, Tibet, Bhutan, Sikkim, Darjeeling), produced from yak, chauri (yak-cow cross) or cow buttermilk/whey, and pressed in wooden moulds with stones. It exists in two reusable forms — soft chhurpi (fresh, white, curd-like) and hard chhurpi (smoked, rock-hard, long-keeping) — that function as a foundational dairy component for Sherpa, Bhutia, Tamang, Bhutanese, and Sikkimese cookery.

The formula
1 : 8.7 fat : solid-not-fat (or ~⅞ skim to ⅛ half-fat)
Standardised milk is heated to 60–70 °C before acid/ferment curdling; buttermilk or previous-batch whey acts as the coagulation and inoculant.

Method
- 1Standardise milk/buttermilk to ~1:8.7 fat:SNF and heat to 60–70 °C.Reduces fat (fat shortens storage and softens texture) and the heat prepares proteins for acid coagulation.
- 2Add fermented whey/buttermilk (and optional acid) and hold at temperature until the curd sets.Lactic acid plus heat coagulates casein; LAB begin fermentation, lowering pH and preserving the curd.
- 3Strain the curd through muslin to separate whey.Removes the sugar-rich whey that would otherwise spoil storage and concentrates the curd mass.
- 4Pack curd into wooden moulds and press under stones for ~24 hours.Expels remaining whey and compacts curds into a dense, sliceable, low-moisture wheel — the texture signature of chhurpi.
- 5Demould, cut into small cheeses/pieces, salt, and either use fresh (soft chhurpi) or sun-dry and smoke (hard chhurpi).Soft form is eaten within days for mild, fresh flavour; smoking and drying desiccates the curd into a rock-hard, multi-year keeping cheese.
Techniques that matter
Heat-and-acid coagulation
Uses fermented buttermilk or whey as both acidifier and starter — no commercial rennet needed, suiting high-altitude herders.
Stone-pressing in wooden moulds
Slowly expels whey and densifies the curd over ~24 h, which is what lets hard chhurpi become chewable for hours.
Cold smoking
Imparts smoke phenols and further reduces moisture, turning soft curd into storage-stable hard chhurpi.

Substitutions
- yak/chauri buttermilk → cow buttermilk — Cows' milk yields a milder, softer curds similar to paneer; less dense and lower smoke absorption.
- yak/chauri buttermilk → goat buttermilk — Works for soft chhurpi; flavour is sharper and curd set slightly looser.
- fermented whey coagulant → lemon juice or vinegar — Will coagulate the curd but the cheese will lack the characteristic LAB-fermented flavour.
Troubleshooting
Cheese turns out soft and spoils quickly
milk too high in fat or pressing time too short → re-standardise to ~⅞ skim, ⅛ half-fat, and press under stones for the full 24 h.
Curd never sets
fermented whey inoculum too old or temperature below 60 °C → use freshly soured buttermilk and reheat milk to 65–70 °C before adding it.
Hard chhurpi cracks instead of chews
over-dried or over-smoked → shorten smoke time and store with a piece of cloth dampened in lightly salted water.
Bitter, off-flavour curd
smoke temperature too high or poor salt distribution → use cold smoke and salt the curds evenly before pressing.
