Chili-Garlic Sauce

蒜蓉辣酱 · A pungent, vinegary cold sauce built on fermented or cooked chilies and blanched garlic, blended to a smooth, pourable consistency. It provides three simultaneous seasonings — heat, aromatics, and acid — in a single component. Unlike a finished hot sauce, it is a foundational condiment: an unfinished seasoning layer added to dishes during or after cooking.

The formula

Techniques that matter

Blanching (garlic)

Emulsification (colloid)

Blending creates a temporary emulsion of garlic solids suspended in acetic acid medium. The vinegar's acetic acid helps break down pectin in chili skins, stabilizing the suspension.

Acid preservation

Vinegar at sufficient concentration (pH below 4.6) suppresses pathogenic bacteria and allows safe refrigeration storage for weeks.

Thermal concentration

Brief cooking reduces water content, increasing effective salt and acid concentration, which extends shelf life and deepens flavor.

Troubleshooting
