Chocolate Mousse Base
A light, aerated preparation of melted chocolate tempered with a sabayon of egg yolks and enriched with whipped egg whites, forming a stable foam. This is the foundational base from which all chocolate mousses are built — neutral enough to receive additional flavoring, yet complete enough to serve directly, unmoulded or piped into glasses.

The formula
200 g chocolate : 165 g whole eggs : 50 g sugar : 25 g butter (optional)
Ratio by weight. Eggs are specified as 165 g (≈3 large eggs, ~55 g each). For 1 kg base: 545 g dark chocolate (65–70% cacao), 180 g eggs (≈3 large), 135 g sugar, 70 g butter. The eggs provide both emulsification (yolks) and structure (whipped whites). Butter is optional but adds richness and delays setting.

Method
- 1Melt chocolate and butter together in a clean, dry bowl set over barely simmering water (water must not touch the base of the bowl). Stir gently until homogenous and fluid at 40–45 °C. Remove from heat immediately.Dry heat protects the cocoa butter from absorbing steam, which causes graininess. 40–45 °C keeps chocolate fluid while remaining below the coagulation threshold of egg proteins.
- 2Whisk egg yolks with sugar in a separate bowl over the same bain-marie. Heat while whisking constantly until the mixture reaches 75–80 °C, turns pale, thickens to a ribbon, and holds a trail for 2 seconds when the whisk is lifted.This sabayon stage pasteurizes the yolks safely without scrambling them, dissolves all sugar, and develops structure through partial protein coagulation — the backbone of the mousse.
- 3Pour the melted chocolate in a thin stream onto the sabayon while whisking vigorously. Incorporate fully before the chocolate cools below 35 °C.Chocolate above 35 °C stays fluid and emulsifies with the yolk fat phase. Below this, cocoa butter begins to crystallize and the mixture will seize or grain.
- 4Whip egg whites with a pinch of sugar to firm, glossy peaks. The whites must be completely fat-free from clean separation.Fat (yolk residue) coats the protein strands and prevents air incorporation. Clean, cold whites whip to 8–10× volume and form the structural scaffold of the finished base.
- 5Fold the whipped whites into the chocolate–sabayon in three additions, using a large rubber spatula. Work gently: lift from the bottom, fold over, rotate bowl. Stop as soon as streaks disappear — do not deflate.Over-folding collapses the foam; under-folding leaves white streaks and uneven texture. The final mix should be glossy, fluid enough to pour, and hold firm peaks.
Techniques that matter
Bain-marie control
Provides indirect, gentle heat that prevents scorching and allows precise temperature management for both chocolate melting (40–45 °C) and sabayon cooking (75–80 °C).
Sabayon construction
Egg yolks with sugar heated to 75–80 °C create a stable emulsion with increased viscosity through partial protein coagulation — this is what allows chocolate to be folded in without seizing.
Egg-white foam stability
Whipped egg-white proteins unfold and re-coagulate around air bubbles, forming an elastic film. The proteins are most stable when whites are fat-free, cold, and at peak volume when incorporated.
Gentle folding
Mechanical incorporation of a low-density foam into a denser mixture preserves the maximum volume. Aggressive stirring breaks the air-cell walls and produces a dense, heavy result.

Mousse au chocolat classique (no butter)France
The ratio above without butter. Lighter, more intensely chocolate, sets more firmly. The canonical reference version.
Mousse au chocolat with creamFrance/Belgium
Folding in 100–150 g softly whipped 35% cream at the end (after whites). Increases richness, slows set, adds a dairy note. Ratio: add 30% of chocolate weight in cream.
Sauce au chocolat (direct derivative)France
The chocolate–sabayon mixture used alone without whites, thinned with 50–80 ml warm cream or milk. Becomes a pourable dessert sauce or cake glaze.
Chocolate marquise / terrineFrance
Base poured into a buttered, lined mould and set overnight in the refrigerator. Sliced and plated as a cold dessert; the same ratio, set firm.
Chocolate mousse with praline or nut pasteFrance/Switzerland
Chocolate reduced to 150 g; 50 g hazelnut or almond praline paste folded in at stage 3. Adds texture and flavor complexity.

- Sugar → Inverted sugar or glucose syrup — Adds moisture and delays crystallization; slightly increases sweetness perception. Use at 80% of sugar weight.
Troubleshooting
Grainy, gritty texture in the finished base
Water entered the chocolate during melting (steam or wet bowl); or chocolate was heated above 50 °C, causing cocoa solids to seize → Use a perfectly dry bowl and spoon; ensure the bain-marie does not boil violently; never add cold liquid to melted chocolate during melting.
Mousse collapses or weeps liquid after setting
Egg whites were overfolded, deflating the foam; or whites were insufficiently whipped and cannot support the chocolate weight; or temperature differential shocked the chocolate when sabayon was added → Stop folding as soon as streaks disappear; always whip whites to firm, glossy peaks; ensure chocolate–sabayon is at ≥35 °C when combined.
Base tastes dry, tight, or bitter — chocolate overwhelms
Too little sugar for the chocolate amount; or chocolate percentage is too high (>80%) for the palate without balancing sugar → Use the 50 g sugar per 200 g chocolate ratio as a minimum; lower cacao percentage to 65% for better balance, or increase sugar to 60 g.
Egg whites will not whip — remains flat and liquid
Fat contamination from broken yolk; or eggs are too old (whites degrade over time); or any trace of grease in the bowl or whisk → Separate eggs one at a time into a clean cup before transferring whites to the bowl; use a spotless copper or stainless bowl; use a pinch of cream of tartar to strengthen foam if concerned about freshness.
