Choron

Choron is a classical French derivative of hollandaise in which tomato paste or purée is incorporated into the emulsion to give a brick‑red color, bright acidity, and subtle sweetness that reads as distinctly savory rather than sweet. It is béarnaise with the herbs and shallot‑vinegar reduction replaced entirely by tomato. The sauce holds the hollandaise structure — a warm, loose oil‑in‑water emulsion of egg yolk and melted butter — but the tomato element introduces pectin, additional acidity, and lycopene, which deepens both the flavor and the color without destabilizing the emulsion when added correctly.

The formula

250 g clarified butter : 100 g egg yolk (2.5 : 1) : 25–30 g tomato paste

Classic Escoffier proportion. Butter weight is always measured against yolks, never volume. Tomato paste added after the emulsion is fully formed and the sauce has cooled slightly from cooking temperature (~65–68 °C). The reduction stage (wine‑vinegar + water) uses roughly equal parts liquid, reduced by half before being strained into the yolks.
