Consommé · A perfectly clear, deeply flavored stock that has been purified through controlled heat‑coagulation of a protein raft. The raft acts as a living filter: egg whites denature and rise to the surface as a porous mass, trapping suspended fat globules and particulate matter while allowing the clarified liquid to pass through perfectly transparent. The result is a stock of absolute clarity and concentrated flavor intensity that represents the apex of classical stock craft.

The formula

1 L stock : 60–90 g egg whites

One raft clarifier per 1–1.5 L finished consommé. Use 2–3 egg whites (≈60–90 g) per liter of stock. The raft must be cold when added to cold stock; heat very gradually over 45–60 min to 82–85 °C. Yields roughly 750–850 mL clarified liquid from 1 L starting stock due to absorption by the raft.

Method

Protein coagulation (clarification)

Egg‑white proteins denature and aggregate, forming a mesh that selectively traps fat and suspended solids while allowing water and dissolved aromatics to pass through — a natural membrane filtration using heat as the trigger.

Controlled temperature management

The 82–85 °C window is critical: hot enough to fully coagulate the proteins and set the raft firmly, cool enough to avoid churning the liquid or producing a curdy, broken raft that releases impurities back into the stock.

Percolation through a raft

The raft acts as a gravity‑fed filter; the liquid beneath it, now purified, is drawn off through small holes. The principle is identical to percolation coffee — but the filter medium is living protein that actively bonds with impurities.

Dégraissage (fat removal)

Any fat remaining in the stock before clarification will be trapped by the raft and removed with it — making consommé the most complete fat‑removal technique in classical cooking, superior to simple skimming.

Troubleshooting

Storage
