Cookie Dough Base
Pâte sablée · A rich, tender short dough leavened by mechanical incorporation of air during creaming, characterized by a high fat-to-flour ratio that impedes gluten development and produces a crumb that shatters cleanly. The sweet dough relies on the Maillard reaction during baking for flavor and color development rather than caramelization of sugars.

The formula
1 part sugar : 1.3 parts fat : 2 parts flour : 0.7 parts egg (by weight)
For a classic sablée: 200 g flour, 100 g butter (cold, 82% fat), 80 g sugar, 1 whole egg (50 g) + 1 yolk (20 g). Eggs provide structure via coagulation at 62–70 °C; fat coats flour particles and prevents hydration. Salt and leavening are optional modifiers, not ratio components.

Creaming method
Beating sugar into fat at room temperature (or softened butter) creates an emulsion and traps air in a sugar-fat matrix, providing the primary leavening for cut cookies.
Scoring and docking
Scoring the surface with a fork or blade before baking controls aeration paths and prevents dome-shaped blistering, producing flat, even cookies.

Troubleshooting
Cookies spread flat and thin, losing all height
Butter too warm or over-creamed at too-high speed. Fat melted before baking, losing structural integrity and producing excessive gluten from overmixed flour. → Chill shaped cookies for 20 minutes on the baking sheet before baking. Ensure butter is cold (10–12 °C) when creaming. Reduce creaming time to 3 minutes maximum.
Dough tears and cracks when rolled
Dough too cold (fat completely solid and brittle) or too warm (fat melted and dough greasy). Insufficient resting period so flour not fully hydrated. → Let dough sit at room temperature 5–10 minutes until pliable but still cool. Re-chill if butter has softened too much. Ensure minimum 60-minute rest.
Tough, chewy texture instead of tender and crumbly
Overmixed flour after adding, or using high-protein bread flour. Over-creaming can also develop gluten beyond the tender-dough range. → Mix flour in only until just combined. Switch to pastry or cake flour. The identity requires shattering tenderness, not chewiness.
Dry, sandy, crumbly dough that won't hold together
Too much flour relative to fat, or butter fat content too high. Over-baking at too-low temperature can also draw moisture from the egg phase. → Check ratio by weight, not volume. Add 1 tbsp cold milk or cream to bind. Ensure butter is measured accurately by weight.
