Cornstarch Slurry

A starch-thickening technique in which granular cornstarch is fully hydrated and dispersed in cold liquid before introduction to heat, producing a translucent gel upon gelatinization. The foundational starch-thickening method for glazes, sauces, and fillings.

The formula

1:1 by weight (cornstarch : cold water)

Usage: 10–15 g slurry thickens 100 g liquid to medium consistency; up to 25 g for an opaque gel. At 1:1, 15 g ≈ 1 tbsp. Ratio stays constant; scale freely.

Method

  1. 1Measure cornstarch into a bowl. Add an equal weight of cold water.Weight, not volume, guarantees reproducibility. A 1:1 ratio by weight ensures every starch granule is fully hydrated before heat is applied.
  2. 2Whisk vigorously until no dry pockets or clumps remain — the mixture should be milky-white and fluid.Any unmixed starch will form lumps that refuse to gelatinize, leaving gritty specks in the finished sauce.
  3. 3Pour the slurry into the hot liquid (≥70 °C) while stirring or whisking constantly.Constant agitation distributes the swollen granules evenly and prevents the pot bottom from scorching. The main liquid must be hot enough to complete gelatinization quickly.
  4. 4Bring the mixture to a full simmer and hold for 30–60 seconds, stirring continuously.Full gelatinization requires sustained heat. Initial thickening often reverses as granules finish swelling; a brief simmer locks in viscosity.

Tempering

Introducing the slurry to hot liquid in a thin stream while stirring prevents local overheating of starch granules, which causes them to rupture and lose thickening power.

Gelatinization

Starch granules absorb water and swell irreversibly at 63–75 °C, expanding to several times their original volume, and scatter light to produce a translucent gel. This is the core transformation the cook must control.

Troubleshooting

Sauce remains thin after slurry is added and simmered

Slurry was added to a liquid below 60 °C; starch never fully gelatinized, or acid in the liquid inhibited swellingRemove from heat, bring main liquid to a full boil, then whisk in a fresh slurry over high heat while stirring. If the liquid is acidic (pH < 4.5), add 1–2% baking soda to raise pH before thickening.

Sauce turns thin and watery after holding at a simmer for several minutes

Overcooking ruptures starch granules (retrogradation and amylose leaching), destroying viscosityAdd a second, smaller slurry (5–8 g per 100 g) off heat, stir to re-thicken without boiling. Future batches: stop cooking at full gelatinization; do not hold at a hard simmer.

Lumps in the finished sauce

Dry cornstarch was added directly to hot liquid, or slurry was poured in too quickly without stirringPass the sauce through a fine-mesh strainer. If lumps persist, blend with an immersion blender to break them; this will not fully restore smoothness but improves texture.

Slurry seizes into a rubbery mass when added to the hot liquid

The starch concentration is too high relative to the liquid volume; granules crowd each other and form an elastic, insoluble networkStart with more liquid and use a 1:1 slurry at the standard ratio. If the mass has already formed, remove it, dissolve it in a fresh pot of cold liquid, and reheat slowly with stirring.

Storage

Keeps Up to 24 hours refrigeratedCover the container surface with plastic pressed directly against the slurry to prevent a dried skin from forming. Do not freeze a pre-made slurry; freeze-thaw destroys the gel matrix and produces a gritty, broken result. Reheat: Stir gently over low heat or microwave at 50% power in 15-second intervals.
