crème pâtissière · A starch-thickened vanilla custard — the foundational French pastry cream used to fill éclairs, mille-feuille, tarts, choux, and profiteroles. Distinguished from crème anglaise (egg-thickened) by the addition of starch, which gives it a thick, pipeable consistency that holds its shape under frosting or glazing. It is a component, not a finished dish.

The formula

whole milk 1000 g : granulated sugar 200 g : egg yolks 6 (≈120 g) : potato starch 60 g (or wheat flour 80 g)

Scale all ingredients proportionally. Potato starch swells more efficiently than wheat flour — flour-based versions require approximately 25–30% more starch equivalent. Reduce sugar to 150 g for a less sweet, more neutral base.

Identity

  • Always thickened with starch (potato/corn/wheat), never egg alone
  • Vanilla bean (or high-quality extract) is the defining flavor — not chocolate, not fruit
  • Must be cooked to a full, rolling boil to fully gelatinize starch and destroy amylase inhibitors that would liquify the cream on standing
  • Plastic film pressed directly on the surface during cooling — no skin, no lid
  • Strained immediately while hot to achieve a perfectly smooth, lump-free consistency

Ingredients

Method

  1. 1Combine milk, split vanilla bean (with scraped seeds), and salt in a heavy saucepan. Heat over medium until just steaming (≈85 °C). Cover and steep off heat for 10 minutes.Gentle infusion extracts vanillin without scorching the milk. Steeping off-heat maximises flavour extraction without evaporation loss.
  2. 2Whisk egg yolks and sugar together in a separate bowl until slightly pale and combined (~1 minute). Add potato starch and whisk to a smooth, thick paste.Beating yolk and sugar together dissolves sugar and begins emulsification. Adding starch at this stage creates a dispersion matrix that prevents lumps when hot milk is introduced.
  3. 3Remove vanilla bean from milk. Gradually pour the hot milk into the yolk mixture in a thin stream, whisking constantly to distribute temperature evenly and prevent scrambling.Tempering raises the yolk temperature gradually. A thin stream and constant motion ensure no localised overcooking of the protein matrix.
  4. 4Return the entire mixture to the saucepan. Cook over medium heat, stirring continuously with a wooden spoon or whisk, until the cream reaches a full, bubbling boil — maintain at the boil for 1–2 minutes.Full boiling is the critical safety and texture threshold: it completes starch gelatinization, destroys naturally occurring amylase that would liquify the cream on standing, and ensures the yolk proteins set enough to support the starch gel.
  5. 5Strain through a fine-mesh sieve into a clean, wide container. Immediately press a sheet of plastic film directly onto the surface so it makes contact with the cream with no air trapped.Straining removes any bits of cooked egg and vanilla fragments. Plastic film prevents condensation from dripping back into the cream (which causes skin) and protects the surface from oxidation.
  6. 6Cool rapidly in an ice bath to below 20 °C, then refrigerate. Use within 48 hours.Rapid cooling halts residual cooking. Below 20 °C the starch gel sets to its final firm texture. Below 5 °C, bacterial growth is suppressed.

Techniques that matter

Starch gelatinization

Potato starch granules swell and burst at 58–67 °C, absorbing liquid and forming an irreversible gel. Full boiling ensures complete gelatinization; insufficient heat leaves starch grains intact and the cream thin and chalky.

Egg tempering

Adding hot liquid gradually prevents egg proteins from coagulating prematurely. The starch in the mixture also buffers temperature spikes, making the tempering step more forgiving than with a plain egg custard.

Starch retrogradation (storage)

On refrigeration, amylose molecules in the starch gel realign and crystallise, causing the cream to stiffen overnight — this is normal and resolves on gentle reheat. Over-stiffening indicates excessive starch or insufficient fat.

Variations & derivatives

crema pasticceraItaly

Adds 30 g butter stirred in after cooking and 1 whole egg for a richer, more buttery texture. Often includes a small amount of limoncello or orange zest. Slightly softer set than the French version.

VanillecremeGermany / Austria

Uses only 40 g wheat flour per litre and 4 egg yolks, producing a lighter, softer cream closer to a thick crème anglaise in body. Standard filling for German Torten.

crème diplomateFrance

Folded with 200–300 g stiffly whipped cream (≈ 30% of cream weight) after cooling to 30 °C. Significantly lighter and more aerated while retaining structure. Used in verrines and lighter Parisian pastry.

Substitutions

Troubleshooting

Grainy, scrambled-egg texture despite tempering

Direct addition of too-hot milk to yolks without gradual mixing, or cooking continued after the cream broke (seized). The protein matrix has coagulated irreversibly.If caught early (before boiling), strain immediately. If the cream is severely broken, it cannot be rescued — discard and start fresh. Ensure the milk is below 90 °C before the first addition to yolks.

Cream is too thin and does not set

Insufficient starch — the starch weight is below the gelatinization threshold needed to form a stable gel at the given liquid volume. Undercooking (not reaching full boil) is the most common cause.Dissolve additional starch in cold water (1:3 ratio) and whisk it into the hot cream; reboil for 1 minute. Alternatively, whisk 1 tbsp potato starch into a portion of cold cream, then combine with the thin batch and reheat.

Hard, rubbery layer on surface after refrigeration

Skin formed from exposure to air and evaporating condensation. Also occurs if the cream was covered with a lid rather than plastic film pressed to the surface — water droplets pool and wet the surface, concentrating starch.Scrape off the top 2–3 mm layer. To prevent: always press plastic film directly onto the surface. Reheat gently, stirring, to restore a smooth consistency.

Cream weeps liquid (syneresis) after standing 12–24 hours

Starch was over-cooked (above 100 °C for too long), degrading the amylose matrix and causing it to contract and squeeze out water. Also occurs with excessive sugar (> 25% of liquid weight) which makes the gel hygroscopic.Gently reheat, whisking in a splash of cold milk or a starch slurry to rebuild the gel. Use within 24 hours of this correction.

Storage

Keeps 48 hours refrigerated; 1 month frozenRefrigerate in an airtight container with plastic film pressed to the surface. For freezing, portion into airtight containers or zip-lock bags, exclude as much air as possible, and freeze flat. Reheat: Reheat in a heavy saucepan over low heat, stirring constantly with a wooden spoon. Alternatively, reheat in a bain-marie, stirring, to 60–70 °C. Do not use a microwave — it heats unevenly and breaks the starch gel.
