Doenjang
된장 · A traditional Korean fermented paste made by brining sun-dried fermented soybean blocks (meju) in heavily salted water for many months. The mature solids are the doenjang paste itself, prized for a deep, savory, salty, earthy umami that defines Korean home cooking.

Method
- 1Soak, steam/boil soybeans until soft, mash while warm, and mix with roasted wheat- or rice-based koji.Cooked, mashed soybeans give enzymes and koji mold a starch- and protein-rich substrate to colonize.
- 2Shape the mash into brick-like blocks (meju), then dry and ferment in a cool, airy spot for 2–4 weeks, traditionally under rice straw on a sunny day.Slow outdoor drying fosters Aspergillus and other molds that develop the future doenjang's flavor.

Troubleshooting
Paste smells sharply sour or alcoholic
Brine salinity dropped below safe levels or jar was opened too often in warm weather → Rebuild at 17–18% salinity or discard and restart; keep jar sealed except on cold days.
Surface shows pink, orange, or green vigorous mold on exposed solids
Solid pieces sticking above the brine line (kahm yeast or unwanted mold colonization) → Push all solids fully under brine; skim the surface mold and recheck salinity.
Flavor tastes flat or only salty, with little umami depth
Fermentation stopped too early or temperature stayed too cold for enzymatic activity → Age longer (often 12+ months) and move the jar to a slightly warmer spot that still stays under ~20°C.
Paste is extremely bitter or harsh
Over-fermentation by certain Bacillus strains or use of low-quality, cracked beans that fouled the brine → Stir a small portion into soup; if unusable, reserve only the clean supernatant liquid as a milder soy sauce.
