Doon Chetin

Doon Chetin · A no-cook Kashmiri cold condiment in which soaked walnut kernels are pulsed with green chillies and salt to a paste, then folded into thick, hung yogurt (curd). It is a foundational chutney base used as a dip, spread, or table accompaniment across breads, snacks, and wazwan-adjacent meals.

The formula

1 cup walnuts : 1 cup hung yogurt ; 2 green chillies per cup walnuts ; 1 tbsp dry mint optional

Equal volumes of soaked walnuts and drained yogurt give the characteristic creamy body; chillies and salt are pulsed in, then yogurt is hand-folded.

Method

  1. 1Soak walnut kernels in cool fresh water for 30 minutes, then drain and discard the soaking water.Softens the nuts for a smoother grind and pulls bitter tannins out of the skins.
  2. 2Meanwhile, tie yogurt in a muslin cloth and hang to drain until thick and creamy (chakka-style).Removes whey so the folded chutney holds its body instead of splitting or weeping.
  3. 3Pulse drained walnuts with green chillies and salt in a food processor, adding 1 tbsp water only if needed, to a coarse paste.Coarse grind preserves nut character; the chillies and salt disperse evenly through the fat of the walnuts.

Troubleshooting

Chutney turns watery on standing
