The formula

The sugar is not merely sweetening — it provides the disaccharide lattice (sucrose) and the glucose/fructose breakdown products that drive both caramelization and Maillard chemistry, contributing the pullable, fudgy texture. Reduce too far and it becomes candy; stop too early and it lacks depth.

Method

Maillard Reaction (non-enzymatic browning)

Caramelization of disaccharides

Sucrose and lactose undergo thermal degradation above ~160 °C, producing bitter-sweet caramel notes (furfural, hydroxymethylfurfural) that layer atop the Maillard profile.

Vacuum reduction (modern/professional variation)

Reducing under vacuum lowers the boiling point, allowing Maillard chemistry to occur at lower temperatures with less risk of scorching, producing a brighter, more precise-flavored result in a fraction of the time.

Made with goat's milk instead of cow's milk, yielding a more pronounced, tangy dairy character. Often cooked with cinnamon and sometimes vanilla.

ArequipeColombia / Ecuador

Prepared with whole milk and sugar, sometimes with a touch of bicarbonate. Colombian arequipe tends toward a slightly softer, more flowing consistency than Argentine dulce de leche.

Manjar blancoChile / Peru

Literally 'white delight' — a name that persists despite the caramel color. Chilean manjar blanco uses milk and sugar, sometimes with honey or sugarcane juice, and is the filling for alfajores.

Confiture de laitFrance

Made by the same principle but traditionally prepared by sealing milk and sugar in a vessel in a bain-marie for hours. Denser and more intensely caramelized.

Dulce de leche condensadoPan-Latin America

Uses one can of sweetened condensed milk, boiled in its sealed can for 1.5–2 hours. Convenient shortcut; the result is more uniformly sweet and less complex than the milk-sugar version.

Troubleshooting

Batch tastes burned and bitter despite frequent stirring

Insufficient scraping frequency, too-high heat, or a pot with thin walls that allows localized hotspots.Switch to a heavy-bottomed pot (enameled cast iron is ideal), reduce heat to the lowest setting that maintains a bare simmer, and use a heat-resistant silicone spatula to scrub the bottom and sides every 2–3 minutes.

Grainy or sandy texture in the finished product

Insufficient stirring during reduction, which allows lactose crystals to form and coalesce, or too high a ratio of sugar to milk.Stir more frequently and more deliberately, ensuring the spoon reaches the bottom corners. Using a small amount of glucose syrup or corn syrup (10–15% of sugar weight) suppresses lactose crystallization and yields a smoother texture.

Too thin or too loose after cooling

Insufficient reduction — not enough water driven off, so the matrix never sets properly.Return to the pot and continue reducing over low heat, checking temperature (needs to reach 225–230 °F / 107–110 °C) and observing the viscosity against the spoon. A properly reduced dulce de leche should coat the spoon thickly and hold its shape briefly before flowing.
