Frangipane
Crème d'amandes · A rich almond‑flavored cream paste of classical French origin used as a filling and building component in pastry. Eggs are measured by weight. One large egg (~50 g) serves as the reference unit; scale all other ingredients proportionally. For 1 egg: use 50 g each butter, sugar, almond flour = 200 g total. Optional: 5–10 g flour per 200 g batch for a firmer set (Pithiviers style).

Eggs act as emulsifiers — their lecithin binds the fat phase (butter, almond oil) to the water phase (egg, sugar syrup). Gradual addition of eggs prevents the emulsion from collapsing. A broken emulsion produces a greasy, curdled, weeping frangipane.
Egg‑protein coagulation
Unlike béchamel or pastry cream, frangipane sets without starch gelatinization or a heat‑induced custard gel. During baking, egg proteins denature and coagulate (35–75 °C), forming a firm, dense network that gives the finished cream its structure. The eggs are the primary setting agent.
Maillard reaction (baking stage)

Pithiviers‑style frangipaneFrance (Loire Valley / classical pastry)

Italian frangipane (Torta di Frangipane)Italy
Italian tradition sometimes enriches the almond cream with crème pâtissière (pastry cream) folded in, creating a softer, moister filling with a milder almond flavor. This is a genuine derivative but differs substantially from the French base formula.
Praliné frangipaneFrance / modern pastry
Replaces up to half the almond flour with praline paste (roasted almonds and caramelized sugar). Adds depth of caramel flavor and a slightly softer, glossier set. Common in upscale galettes and tarts.
Noisette frangipaneFrance
Replaces almond flour entirely with hazelnut flour (pralin). The hazelnuts are skinned, roasted, and ground. Produces a darker, more bitter, intensely flavored cream used in specialty tarts and bûches.
