Fritter Batter
pâte à frire · A pourable or dippable coating of flour, liquid, egg and leavening that encases ingredients before deep‑frying, forming a crisp, golden, moisture‑sealing shell. It is not a dough — it is a batter: fluid enough to cling by adhesion, thick enough to build a visible crust.

The formula
1 : 1 : 0.2 : 0.05 (flour : liquid : egg : baking powder, by weight)
Vary liquid identity (water, beer, sparkling water, milk) to change flavor and crust character. Beer adds CO₂ and subtle fermentation notes for a honeycomb crust; sparkling water yields the lightest, most delicate crunch; milk gives a softer, richer crust.

Method

Replace the liquid with cold beer (ale, lager, or stout). CO₂ bubbles and residual enzymatic activity from fermentation produce an exceptionally light, open honeycomb crust. The alcohol adds flavor and contributes to a tender crumb.
Tempura BatterJapan
Very thin batter: 100 g cake flour + 150 g cold sparkling water + 1 egg yolk + pinch of salt. Mix just before frying; food is barely coated. Results in a delicate, translucent, supremely crisp crust.
Biga or Poolish Enriched BatterItaly
Substitute up to 30 % of the flour with a prefermented stiff starter (biga or poolish). Adds depth of flavor and improves crust color through additional sugars from fermentation.

Troubleshooting
Batter slides off food during frying, pooling in oil
Fat temperature too low (below 160 °C). Batter sets too slowly, and steam pressure builds unevenly, forcing it off. → Raise fat temperature to 180–185 °C before each batch. Pat food dry before battering.
Crust is dense, heavy, and not golden
Batter too thick or too much flour relative to liquid; also possible under‑hydration from insufficient mixing or resting. → Adjust liquid ratio to achieve a pourable but not runny consistency. Rest batter 30 minutes to fully hydrate starches.
Excessive oil absorption, soggy crust

Crust is overly brown or burnt before interior cooks
