ghee

घी · Pure butterfat produced by rendering butter over gentle heat until all water has evaporated and the milk solids have separated and browned slightly, then strained clear. The result is a shelf-stable, nutty, golden fat containing no lactose or casein — functionally distinct from plain clarified butter because the Maillard reaction in the milk solids produces a characteristic aroma. A foundational fat in South Asian, Persian, and Arabic cooking, used as a cooking medium, a flavouring agent, and a finishing fat.

The formula

4:3 butter : ghee (by weight)

1 kg (2 lb 3 oz) unsalted butter (ideally 82–84 % fat) yields approximately 800 g (2 ¾ cups / ~890 ml) finished ghee. Scale freely; use a heavy, wide-based pot so the water evaporates evenly. The yield is always slightly less than the starting weight because water (~18 %) and milk solids (~1–2 %) are removed.

Ingredients

Method

  1. 1Place butter in a heavy, wide pot (ideally stainless steel or enamelled cast iron) over medium-low heat. Do not add water or any other ingredient.A wide surface area maximises evaporation of water. Heavy metal prevents hot spots that would burn the milk solids before the water fully evaporates.
  2. 2Melt butter slowly, undisturbed. As it heats, the water begins to boil vigorously (foam appears) and milk solids sink and rise as curds.The first stage is pure water removal. Vigorous bubbling is the audible signal that water (the heaviest component by volume) is leaving.
  3. 3Continue heating at a steady, low simmer. Skim off the white foam with a spoon or fine skimmer as it rises. Reduce heat if the bubbling becomes turbulent.Skimming removes denatured protein foam that would otherwise hold moisture and cloud the fat. Gentle heat prevents the milk solids from burning before they are dry.
  4. 4As water evaporates (~8–12 minutes for 1 kg), bubbling becomes sparse and intermittent. The milk solids at the bottom darken from cream to golden-brown to amber. A crackling sound may be heard.Once the water is gone, the butterfat is hot enough for Maillard reactions in the remaining milk solids. This is what gives ghee its characteristic nutty aroma — unlike plain clarified butter, which has no browned-solids note.
  5. 5When the milk solids are a deep amber and the fat is transparent and quiet, immediately remove from heat. Strain through a fine-mesh sieve or cheesecloth lined with a paper towel into a clean, dry, heatproof jar.Residual heat continues cooking the solids; removing from heat prevents over-browning and bitterness. Straining removes all solids completely, ensuring a shelf-stable, clear fat.
  6. 6Allow to cool undisturbed. The ghee solidifies as it cools (below ~28 °C). Seal with a lid only once fully cool.Cooling undisturbed prevents condensation inside the jar. Sealing while warm traps moisture.

Maillard reaction (in milk solids)

Residual milk proteins and lactose caramelise at ~150–165 °C during the dry-fry stage, producing the characteristic nutty, complex aroma absent from plain clarified butter.

foaming / skimming

Denatured whey proteins and casein form a stable foam at the butterfat surface. Skimming removes these solids and accelerates moisture loss.

strain clarification

Passing the hot fat through fine mesh or cloth removes all suspended and settled solids, guaranteeing clarity and long-term stability.

bhuna ghī / tīra ghī (roasted, dark ghee)Rajasthan, India

Cooked until the milk solids are very dark (near burnt). Pungent, intensely nutty; used in specific regional preparations and considered a delicacy.

doodh ghī (milk ghee)Gujarat, India

Ghee made specifically from the cream of buffalo milk; higher fat content, whiter colour, richer mouthfeel.

shabda ghī (salted ghee)Bangladesh, Pakistan

Salt (1–2 %) added before or after rendering. Extends shelf life and is preferred for everyday cooking in those regions.

nīranji makkhan / nīrānji ghīPunjab, India

A two-stage process: butter is first washed in cold water repeatedly to remove lactose, then rendered. Very mild flavour; used in Sikh religious cooking.

Tibetan butter tea gheeTibet / Himalayan region

Made from yak butter; the rendering process is adapted to the higher fat and lower moisture content of yak milk.

Troubleshooting

Ghee smells acrid, sharp or burnt

Heat was too high once the water had evaporated; the milk solids charred before straining. Over-cooking converts pleasant Maillard compounds to pyrazines and acrolein.The batch is ruined and should be discarded. Reduce heat immediately when the bubbling stops and watch colour closely in the final 30–60 seconds of cooking.

Ghee is cloudy or has a white residue

Water was not fully driven off before straining; residual moisture caused cloudiness and reduces shelf life. May also occur if the jar was sealed while still warm.Reheat gently, cook until completely clear and quiet again, and strain into a dry, clean container. Cool fully before sealing.

Ghee has a soapy or metallic off-flavour

The butter contained additives or the pot was reactive (aluminium or unlined copper); or the heat was applied unevenly, creating localised hotspots that degraded the fat.Use stainless steel or enamelled cast iron. If the off-flavour is mild, the ghee may still be functional for cooking (not for finishing).

Ghee turns grainy or separates after storage

Trace moisture introduced from a wet utensil, steam, or sealing before cooling. Also caused by insufficient removal of milk solids during straining.Re-strain and gently reheat to drive off any residual moisture. Store in an airtight container in a cool, dark place.

Storage

Keeps 6–12 months at room temperature (18–24 °C); 1–2 years refrigeratedUse a clean, completely dry glass jar with a tight-fitting lid. Keep away from direct light and strong odours. Ghee absorbs flavours from nearby foods. Do not introduce moisture — never dip a wet spoon. Reheat: Not required for use. If solidified and a liquid fat is needed (for finishing), warm briefly in a small pan or microwave (10–20 seconds). Do not overheat; smoke point drops if overheated repeatedly.
