ginger syrup
姜糖浆 · A saturated sugar syrup infused with fresh ginger, producing a concentrated sweet-spicy liquid used as a flavoring agent, glaze, or cocktail modifier. It is a foundational flavoring component—not a finished sauce—whose potency derives from the fresh root's gingerols and shogaols extracted during maceration and gentle heat.

The formula
1 : 1 : 0.5 (ginger : sugar : water, by weight)
Master ratio: equal-weight fresh ginger and sugar; water added at half the sugar weight (sufficient to dissolve sugar without diluting the final syrup below saturated simple-syrup strength). For a 750-ml batch: 300 g fresh ginger, 300 g white sugar, 150 g water. Ginger is the flavor agent; sugar and water form the syrup body.
Identity
- Must be made with fresh, raw ginger root—dried ginger yields a fundamentally different, earthy flavor profile
- Must reach full saturation: all sugar dissolved, no grain, no crystallization in the finished product
- Must be strained through a fine-mesh sieve or cheesecloth to remove all ginger solids for shelf stability and clarity
- Ginger flavor must be assertive and warming, not merely a whisper—the syrup should register clearly when diluted 1:4

Controlled simmering
Ginger's aromatic and pungent compounds (gingerols) are partially heat-labile; a gentle simmer extracts shogaols and volatile oils without degrading them as boiling would.
Hot-straining
Straining while above 80 °C prevents sugar crystallization in the filter and ensures a perfectly clear, pourable syrup with maximum shelf stability.

Dark ginger syrupCaribbean / Jamaican kitchens
Made with brown sugar and often a cinnamon stick or allspice berry added. Darker color, deeper molasses notes, used in rum cocktails. The brown sugar slightly lowers brix; add 10–15 g extra sugar per 300 g batch to maintain preservation.
Spiced ginger syrupFrench classique / bar tradition

Troubleshooting
Syrup ferments within 3–4 days despite refrigeration
Insufficient brix: too much water relative to sugar, or ginger introduced excess moisture without compensating. Sugar did not fully dissolve or was not at true saturated concentration. → Reboil the syrup with an additional 30–50 g white sugar per 300 g batch to raise brix above the preservation threshold. Ensure strain-through cloth is clean and dry before bottling.
Weak ginger flavor — barely detectable in finished application
Too little ginger used (under equal-weight ginger:sugar ratio), or ginger steeped for insufficient time, or ginger was old and desiccated. → Start fresh with 1:1 ginger:sugar by weight. Add finely grated ginger directly to the finished (cooled) syrup and steep refrigerated for 24 hours before using. One batch yields enough flavor for dilution at 1:4; if it doesn't register, the base was under-extracted.
Cloudy or murky appearance
Ginger starches not fully strained; fine particulate remained in suspension. Also indicates the ginger may have been old or the syrup was not hot enough during straining. → Reboil the syrup and strain twice through a coffee filter or layered cheesecloth. For clarity, strain immediately while hot.
Sugar crystallization in the bottle
Incomplete sugar dissolution (undissolved sugar crystals act as nucleation sites); syrup was not fully saturated; temperature fluctuation in storage. → Gently reheat the syrup in a bain-marie (up to 60 °C) until crystals dissolve. Do not boil—boiling concentrates the syrup further. Add 1 tsp light corn syrup to inhibit future crystallization.
