Hollandaise
Sauce Hollandaise · A warm butter emulsion in which clarified butter is whisked into egg yolks thickened over gentle heat, stabilized by the emulsifying proteins of the yolk and brightened with a measured dose of acid. Hollandaise is the defining warm emulsion sauce — fluid enough to pour, rich enough to coat, and balanced between unctuous butter and clean acidity. It is not a finished sauce but a foundation component that receives finishing seasoning and may be further adapted into its many derivatives.

The formula
1 yolk : 200 g clarified butter : 5 ml acid
Yields ~250 g sauce. Scale by yolk count: each large yolk (~18 g) emulsifies ~180–220 g warm clarified butter. For 500 g finished sauce, use 3 yolks (54 g), 400 g clarified butter, 15 ml white‑wine vinegar or lemon juice, 15 ml water, pinch salt, pinch cayenne. Butter must be warm (50–60 °C), not hot. Yolks must reach 65–70 °C over gentle heat before fat is added. Acid is essential — it lowers yolk coagulation temperature, sharpens flavour, and stabilises the emulsion.
Identity
- Must be made with egg yolks and butter — no other fat substitutes for true hollandaise
- Clarified butter (not whole butter) is non‑negotiable: water in unclarified butter destabilises the emulsion
- Temperature of fat and yolks must be controlled — hot butter or overheated yolks break the emulsion
- Acid (lemon juice or white‑wine vinegar) is not optional — it is essential for flavour balance and emulsion stability
- The finished sauce must be fluid and pourable, not stiff or grainy
Ingredients

Method
- 1Combine yolks, acid (lemon juice or vinegar), and water (10–20 ml) in a heavy‑bottom stainless bowl. Whisk until smooth.Water dilutes the yolk concentration, widening the temperature window before coagulation and preventing a rubbery, scrambled texture under direct steam.
- 2Set bowl over a pot of barely simmering water (bain‑marie). The water should be hot enough to produce steam but not boiling vigorously. Whisk yolks continuously, reaching all areas of the bowl.Gentle radiant heat thickens the yolks through gradual protein coagulation without shocking them. Steady whisking distributes heat evenly and incorporates air, building the foam‑like structure that will later host fat droplets.
- 3Whisk until the yolk mixture reaches 65–70 °C and has thickened to a pale, creamy ribbon that falls in a thick ribbon from the whisk — about 3–4 minutes. Remove from heat.65–70 °C is the optimal coagulation zone: yolks have thickened sufficiently to form a stable matrix, but proteins have not yet fully denatured and scrambled. This is the foundation of the emulsion.
- 4Add warm clarified butter (50–60 °C) in a slow, steady thin stream while whisking vigorously. Start with a few drops to establish the emulsion, then continue adding until all fat is incorporated.Slow addition gives each fat droplet time to be coated by emulsifier before the next arrives. If fat is added too fast the emulsion cannot form quickly enough and the sauce breaks.
- 5Adjust consistency: if sauce is too thick, whisk in warm water (5–10 ml at a time). If too thin, it can be thickened slightly by placing briefly back over steam while whisking, or by adding a small amount of cold butter.Hollandaise should flow in a continuous stream from a spoon. Small temperature adjustments or water fine‑tune viscosity without disturbing the emulsion once established.
- 6Season with salt, cayenne, and an extra few drops of lemon juice or vinegar to taste. Strain through a fine‑mesh sieve if needed.Seasoning is always corrected at the end. Acid brightens the finished sauce; the amount added during cooking is the structural minimum. Straining removes any coagulated yolk bits from an uneven bain‑marie.
- 7Hold in a warm place (45–55 °C) until service — do not cover, do not refrigerate, do not reheat over direct heat.Hollandaise cannot tolerate prolonged high heat — the emulsion will break and the yolk proteins will over‑coagulate. A thermos or a barely warm bain‑marie (not steaming) keeps it fluid for 30–45 minutes.
Techniques that matter
Emulsification (warm fat‑in‑water emulsion)
Egg yolk is a natural emulsifier: its lecithin and lipoproteins coat fat droplets dispersed in the aqueous yolk phase, preventing coalescence. Hollandaise is a temporary emulsion — it is heat‑sensitive and will break if overheated, over‑worked, or if fat is added too rapidly.
Bain‑marie cooking of yolks
Yolks must be cooked to 65–70 °C to thicken, but direct heat or steam above 80 °C causes rapid protein coagulation and scrambling. The bain‑marie provides controlled, radiant heat that raises yolk temperature gradually.
Controlled fat incorporation (mother‑sauce principle)
The rate of fat addition is the critical variable in all warm emulsions. Starting with a few drops establishes the emulsion; subsequent slow addition allows the emulsifier‑to‑fat ratio to remain stable. This principle applies to béarnaise and all yolk‑based emulsions.
Protein coagulation control
Egg‑yolk proteins begin to coagulate at 65 °C and complete at 70–80 °C. The goal is partial, controlled coagulation — enough to thicken the sauce, not enough to set it. Acid shifts this range downward slightly, improving margin for error.
Variations & derivatives
BéarnaiseFrance
The most important derivative. Substitute white‑wine vinegar for lemon juice; reduce shallot, tarragon, and black peppercorns in vinegar to make an aromatised vinegar; replace water with fresh tarragon leaves in the yolk mixture. Classic accompaniment to grilled beef and lamb.
MaltaiseFrance
Hollandaise finished with blood‑orange juice (zested and juiced) and a touch of Grand Marnier. Served with asparagus or grilled fish.
MousselineFrance
Fold 100–150 ml barely‑whipped heavy cream (to soft peaks) into finished hollandaise. Lightens the sauce significantly. Classic with salmon or other rich fish.

Substitutions
- Egg yolks → Commercial yolk powder reconstituted with water — Reconstituted yolk powder can form emulsions but lacks the full lipid profile and natural emulsifiers of fresh yolk. Texture is inferior and the sauce will not have the characteristic richness.changes result
- Clarified butter → Whole butter — Whole butter contains ~15–18 % water. When added to hot yolks the water flashes to steam and disrupts the emulsion. The sauce will break almost immediately.changes result
- White‑wine vinegar → Lemon juice — Both are acids and function equivalently in the emulsion. Lemon adds a brighter, more aromatic citrus note; vinegar adds a sharper, more neutral acid tang. Swap 1:1.
- Clarified butter → Neutral oil (e.g. grapeseed) — Oil will produce an emulsion but it will not be hollandaise — it lacks butter's flavour compounds, fat‑soluble vitamins, and mouthfeel. The sauce will taste flat and greasy.changes result
Troubleshooting
Sauce breaks (fat separates, oil pools, texture turns grainy or curdled)
Fat added too quickly before emulsion was established; fat added too hot (>70 °C); yolks were overheated before fat was added; prolonged cooking after sauce was formed; over‑whisking after emulsion was complete. → If caught early, start a fresh yolk‑and‑acid base in a clean bowl and very slowly whisk the broken sauce into it, drop by drop, as if adding fat. If the broken sauce is very hot, cool it briefly first. If the cause was overheating, discard and start over.
Sauce is too thick and pasty
Too many yolks relative to butter; yolks were overcooked to the point of rubbery coagulation; butter was too cool when added, causing immediate thickening of the emulsion matrix. → Whisk in warm water, 5 ml at a time, until the sauce flows in a continuous ribbon. If available, a few drops of lemon juice will thin it slightly while brightening flavour.
Sauce will not thicken despite extended cooking
Yolks never reached the required temperature (65–70 °C); insufficient whisking during cooking; too much water or acid diluting the yolk beyond its coagulation point. → Return to the bain‑marie and continue whisking, ensuring steam is reaching the bowl. If after 5–6 minutes it remains thin, raise heat very slightly and continue until the ribbon forms.
Sauce tastes flat or lacks brightness
Insufficient acid; acid added only at the beginning and not adjusted at the end; sauce held too long and flavour dulled; overcooked yolks losing fresh flavour. → Add lemon juice or white‑wine vinegar, a few drops at a time, tasting after each addition, until the flavour lifts and balances. A pinch of cayenne can also revive a flat‑tasting sauce.
