The formula

3:2 shallots : chilies by weight; ~10% fermented shrimp paste

For 300 g paste: 150 g shallots (~5 large), 100 g prik dan or Lao chilies, 30 g fermented shrimp paste (kapi or sa eaw), 5 g fine sea salt. Garlic (~20 g) is traditional but unmeasured; add to shallot weight. Scale linearly. Optional: 1 tsp neutral oil in pan only to prevent sticking.

The paste's shelf stability comes from salt concentration and minimal water content, not from cooking. It is essentially a preserved raw paste, which is why the charring technique and salt content are critical for food safety.

Troubleshooting

Paste tastes flat or one-dimensional despite correct charring

Under-pounding — aromatics not fully broken; cell walls not adequately disrupted. Shrimp paste not integrated.Pound shrimp paste and salt first for 60 seconds until completely smooth. Return to paste and pound 2–3 minutes more.

Paste turns grey or brown within days despite refrigeration

Chili heat overwhelms the savory-charred balance
