Kocho (Fermented Enset Pulp)
ኮጮ (Kocho) · A long-fermented, sour, dough-like preparation produced by scraping, chopping, and anaerobically fermenting the starchy pulp of the enset (Ensete ventricosum) pseudostem with a portion of previously fermented kocho acting as inoculant. It is a foundational reusable base used to prepare baked flatbreads and savory accompaniments across the Gurage, Sidama, Hadiya, and other enset-growing regions of southern Ethiopia.

Traditional Gurage/Sidama ratios mix about ten parts freshly scraped pulp to one part decayed starter from a previous batch; modified methods may briefly boil a fraction of the pulp before inoculation.

Method
- 1Harvest a mature (3–4+ year) enset plant and fell the pseudostem, then split it lengthwise.Only mature plants have accumulated enough starch in the pseudostem; the corm and pseudostem are the carbohydrate-rich fractions.
- 2Scrape/decorticate the inner pseudostem with a bamboo scraper to release the starchy pulp, then chop and squeeze out excess moisture.Mechanical extraction liberates parenchyma starch cells and reduces water activity so fermentation proceeds anaerobically without putrefaction.
- 3Combine the fresh pulp with ~10% decayed starter kocho and mix thoroughly; in modified Gurage methods a portion is briefly boiled first.Inoculation introduces the established lactic acid bacteria and yeast consortium; pre-boiling softens cellulose and accelerates acid production.
- 4Pack the inoculated pulp tightly into a leaf-lined pit, gourd, or sealed container, exclude air, and weight the mass.Anaerobic conditions select for desirable lactic acid bacteria and suppress spoilage moulds; compaction prevents oxygen ingress during the long ferment.
- 5Ferment undisturbed for 3 months to 2 years (traditional) or 10–30 days (modified Gurage methods).Extended fermentation develops the characteristic sour flavour, inactivates anti-nutritional factors, and acidifies the mass for safe storage.
- 6Unseal the pit, scoop out the fermented dough, and knead with a little water to a pliable, uniform consistency before forming flatbreads, dumplings, or other preparations.Re-kneading homogenises the batch and restores workable texture after months of pit ageing; the dough is now a finished reusable base.

Troubleshooting
Fermented mass develops black or green surface mould
Inadequate compaction or oxygen ingress in the pit → Discard the contaminated outer layer, repack remaining dough tightly, and ensure heavy weighting during subsequent ageing.
Dough is excessively dry and crumbly after fermentation
Over-draining of moisture during initial scraping or excessive evaporation in the pit → Knead with small additions of water and a little fresh pulp before forming; shorten fermentation in future batches.
Weak or no sour aroma after the expected fermentation window
Insufficient or non-viable starter, or low ambient temperature → Increase starter proportion, verify starter is from a properly decayed batch, and keep the pit in a warm spot.
Off, putrid, or ammoniacal odour
Contamination with spoilage organisms, often from uncovered pits or contaminated leaves → Discard the batch, sanitize the pit and tools, and restart with fresh pulp and verified decayed-kocho starter.
