Kitfo
Also: ketfo, Ethiopian beef tartare
Kitfo is an Ethiopian dish of finely minced raw or lightly warmed lean beef dressed with spiced clarified butter (niter kibbeh) and the chili-spice blend mitmita, served with injera or kocho.
Identity criteria
- 1Lean beef minced very fine, served raw (tere) or just warmed through (leb leb), never fully cooked
- 2Dressed with niter kibbeh — clarified butter infused with spices and aromatics
- 3Seasoned with mitmita, the hot Ethiopian chili-cardamom-clove blend
- 4Served with injera or, traditionally in Gurage country, with kocho (enset flatbread)
- 5Often accompanied by ayib (fresh cheese) and gomen (cooked greens)

Technique
- Fine mincing
- Kitfo's texture depends on very finely cut lean beef, traditionally chopped by hand, not ground coarse
- Warming in spiced butter (leb leb option)
- When not served fully raw, the meat is only briefly warmed in niter kibbeh so it stays rare and silky, never cooked through

Breaks the dish — kitfo is defined as raw or barely warmed
Common mistakes
- Using fatty or coarsely ground beef instead of finely minced lean meat
- Cooking the beef through and losing the raw/rare identity
- Substituting plain butter for niter kibbeh and missing the spiced-butter flavor
- Skipping mitmita or under-seasoning, leaving it flat
