liaison · A finishing mixture of egg yolks and cream (sometimes enriched with butter) used to thicken, enrich, and give sheen to hot sauces and soups without the body or flour taste of a roux. Added at the end of cooking, it brings silkiness and body while masking harsh flavors of reductions.

The formula
1 part egg yolk : 2 parts cream (by volume); use at ~15–20% of final sauce volume
One yolk (≈20ml) plus 40ml cream is sufficient to finish ~300ml of sauce. For richer results, add butter to the liaison (up to equal weight to the yolks).

Method
- 1Combine egg yolks and cream in a bowl. Whisk thoroughly until pale, uniform, and slightly thickened.Creates a stable pre-emulsion and allows gradual acclimation to heat without shocking the proteins.
- 2Season the liaison mixture with salt, pepper, and optional lemon juice. Strain through a fine-mesh sieve.Ensures no chalazae or shell fragments scramble the liaison; seasoning is absorbed, not just surface.
- 3Remove the main sauce or soup from direct heat. Let it subside to gentle simmer (82–85°C).Egg proteins coagulate above 70°C; keeping the base below boiling prevents irreversible scrambling.
- 4Whisk a generous ladle of hot liquid into the liaison bowl — slowly at first, then faster — to temper the yolks up to ~60°C.Gradual temperature rise prevents thermal shock. Adding too fast creates temperature gradients that cook the yolks unevenly.
- 5Pour the tempered liaison back into the main vessel while whisking constantly.Continuous agitation distributes yolk proteins evenly so they set in a fine, even network rather than clumping.
- 6Return to lowest possible heat. Cook, stirring, for 2–3 minutes until the sauce just coats a spoon (nappe). Do not boil.Cooks out the starchy raw egg flavor and achieves full thickening. Boiling collapses the emulsion and curdles the yolk.

Tempering
Controlled heat exchange that raises yolk temperature gradually, preventing protein coagulation before the emulsion forms.
Emulsification
Egg yolk lecithin and fat in cream form a stable oil-in-water emulsion that thickens and coats without segregation.
Nappe test
The sauce should coat the back of a spoon and briefly hold a trail when a finger is drawn through — signals sufficient protein coagulation.
Straining
Removes any coagulated yolk particles that would mar texture or cause graininess in the finished sauce.

Troubleshooting
Sauce curdles or scrambles into visible white threads
Temperature too high (>85°C) or liaison added too quickly to boiling liquid; proteins over-coagulate and expel water. → Immediately remove from heat, add a splash of cold cream or milk while whisking vigorously; strain through fine mesh. Start over if severely broken.
Sauce is too thin despite full liaison addition
Not enough liaison used (ratio too low) or base liquid was too dilute; yolk proteins set but network is insufficient. → Whisk a second small liaison (1 yolk + 2 tbsp cream) and temper in carefully; simmer gently for 1–2 more minutes.
Sauce tastes 'eggy' or has raw flour-like flavor
Insufficient cooking after liaison added; yolk proteins not fully set and raw sulfur compounds remain. → Return to lowest heat for 2–3 minutes, stirring, until the taste resolves to a clean, cooked richness.
Sauce breaks or separates when held
Fat content too low in base to support emulsion; sitting too long without agitation; acid in base destabilizes yolk proteins. → If just sitting, reheat gently and whisk in a small knob of cold butter off-heat to re-emulsify. For acidic bases, add liaison more slowly with constant whisking.
