Liuyang douchi (fermented black beans)
瀏陽豆豉 · A traditional aromatic foundation from Liuyang, Hunan, in which black soybeans are inoculated with Aspergillus oryzae, two-stage fermented under controlled temperatures, and sun-dried to a wrinkled, raisin-like state. Distinguished from other Chinese douchi by its traditional unsalted profile and unusually dry, shriveled final appearance.

The formula
100:2 beans:water (wet-steam); 3% Aspergillus seed by bean weight; 0.4% baijiu by finished weight
Steaming uses ~100 kg water per 100 kg beans plus 200 g food oil; baijiu (Chinese liquor) is added only at the final fragrant-pile stage, not during fermentation.

Method
- 1Double-steam (双蒸法): dry-steam whole black soybeans 15 min in a steamer, then wet-steam in a 100 kg beans : 200 kg water : 200 g oil bath until bean skins wrinkle, then rinse and drain.The two-stage steam fully gelatinizes starch and denatures protein while the oil-water soak promotes even moisture uptake; target bean moisture is 43-48% (ideal 45%) at 40-45 °C — the optimal window for Aspergillus germination.
- 2Inoculate cooled beans with 3% Aspergillus oryzae starter (Huniang 3.042), mix thoroughly, heap to 33-36 °C, then spread in winnowing baskets (簸箕) at ~2.5 cm thickness for koji-making.Thin-layer inoculation of cooled (40-45 °C) beans gives even mold colonization; the controlled bed thickness prevents self-heating above the 40 °C ceiling during mid-stage metabolism.
- 3Hold koji 72-96 hours with temperature management: 32 °C early, ≤40 °C middle, gradually back to 37 °C late; turn the bed when product temperature rises. Troubleshooting
Koji produces weak aroma or kernels stay hard
Inoculation temperature fell below 33 °C or layer was too thick — mold germination was uneven → Re-warm substrate to 40-45 °C before seeding; spread bed thinner (~2 cm) and turn earlier
Finished douchi has bitter, dusty off-flavor
Surface spores (conidia and aerial mycelium) were not fully washed off after yellow-green sporulation → Winnow or rinse koji more aggressively before fermentation; shorten koji stage by a few hours
Beans collapse or turn mushy during steam
Wet-steam was prolonged past wrinkle-stage or steaming temperature was too high → Stop wet-steam as soon as bean epidermis shows wrinkles; aim for 45% moisture at 40-45 °C, not higher
Post-fermentation stalls / off-odors develop
Barrel temperature exceeded 55 °C, killing Aspergillus enzymes and inviting contaminant microbes → Vent or transfer barrels earlier; maintain ≤55 °C throughout post-fermentation
