The formula

10 parts fresh peppers : 4 parts fresh tomatoes : 1 part aromatics and seasonings (all by fresh weight)

Fresh pepper weight is measured before roasting. Roasted peppers yield approximately 60-70% of fresh weight. Aromatics include onion, carrot, garlic; seasonings include salt, sugar, vinegar, oil. Yields roughly 45-50% of combined fresh vegetable weight after cooking and reduction.

Water-bath canning

Submerging sealed jars in boiling water for specified time destroys yeasts, molds, and bacteria, creating stable vacuum seals for long-term pantry storage.

Troubleshooting

Mold growth beneath the oil seal after storage

Spread too thin and watery after cooking
