Marshmallow Base

Guimauve · A soft, spongy confectionery foam built from a gelatin matrix swollen with a hot sugar syrup and expanded through vigorous aeration. The base is a semi-rigid, elastic, highly hygroscopic gel that serves as both a standalone candy and a universal building block for composed sweets, fillings, frostings and frozen desserts.

The formula

1 : 25 : 30 gelatin : sugar : liquid

Base: 15 g dry gelatin (200–250 Bloom). Liquid: 45 g cold water for blooming + 94 g water for syrup = 139 g total liquid. Sugar: 375 g (262.5 g granulated + 112.5 g corn syrup). Optional: 1.5 g vanilla (0.1% of batch). Total yield ~530 g finished base. Gelatin must be ≥2% of total batch weight for stable set; ≤1% yields a pourable sauce. Syrup must reach ≥110 °C for full inversion and hygiene.

Identity

  • Gelatin fully bloomed in cold water before syrup is introduced — never add dry gelatin to heat
  • Hot syrup cooked to ≥110 °C (soft-ball stage) poured into bloomed gelatin, not the reverse

Ingredients

Method

  1. 1Combine gelatin powder with 3–4× its weight in cold water. Stir once to distribute, then leave undisturbed to swell (bloom) for 30–60 minutes at 18–22 °C.Cold-water blooming allows the collagen matrix to fully hydrate before heat is applied. Skipping this step causes clumping that never fully dissolves, resulting in grainy texture and weak structure.
  2. 2Combine granulated sugar, corn syrup/glucose and water in a heavy-bottomed saucepan. Stir over medium heat until fully dissolved, then stop stirring and attach a probe thermometer to the pan wall.Stirring during cooking promotes premature crystallization on pan walls, which seeds uncontrolled crystal growth. Dissolving before boiling prevents sandy texture.
  3. 3Cook the syrup, undisturbed, over medium-high heat until it reaches 110–112 °C (230–234 °F) — soft-ball stage. Immediately remove from heat.110 °C corresponds to ~85% solids — sufficient viscosity to support foam while remaining pourable. Below 107 °C the syrup is too fluid; above 115 °C yields an excessively chewy product.
  4. 4Pour the hot syrup in a thin, steady stream into the bloomed gelatin while whisking at medium speed. Add vanilla and any salt. Whisk until the mixture reaches ≤40 °C, is opaque, white, and holds a distinct ribbon when the beater is lifted.The temperature differential drives simultaneous aeration and cooling. Whipping stops when gelatin begins to set but before full gelation, ensuring a stable, pourable foam.
  5. 5Pour or pipe the mixture into a shallow frame or loaf pan generously dusted with 1:1 powdered sugar and cornstarch. Tap gently to level. Dust the surface. Leave uncovered at room temperature (18–21 °C) for 4–6 hours or overnight to set fully.Uncovered setting at moderate temperature allows even curing. Refrigeration causes the surface to set faster than the interior, creating a dense bottom layer. The dusting coat prevents sticking and absorbs surface moisture.
  6. 6Turn out onto a dusted work surface. Cut with a dusted chef's knife or oiled cookie cutters. Toss pieces in additional dusting powder. Store immediately in an airtight container with interleaving parchment.Cutting at room temperature produces clean edges; cold marshmallow compacts and tears. Immediate storage prevents moisture loss. Sugar inversion via corn syrup or glucose

Inverted sugars lower the crystallization point and act as humectants, preventing the sucrose lattice from forming gritty crystals and keeping the marshmallow soft and shelf-stable.

Gelatin-stabilized foam aeration

Gelatin gels at lower concentration than egg white proteins; the network forms a semi-rigid film around air cells, creating a foam stable at room temperature — unlike egg-white foams that require heat or fat to set.

Soft-ball syrup stage (110–112 °C)

This temperature range corresponds to ~85% solids — sufficient viscosity to support air-cell structure while remaining fluid enough to pour and integrate with gelatin.

Italian Meringue MarshmallowFrance / professional

Replaces plain gelatin bloom with Italian meringue (cooked syrup whipped into soft-peak egg whites), then folded with bloom-stabilized gelatin. Lighter, more voluminous, more tolerant of over-whipping.

Chocolate MarshmallowUniversal

Replace vanilla with 15–20 g Dutch-process cocoa powder dissolved in the hot syrup, or fold in 30–40 g melted, cooled dark couverture after whipping.

Roasted MarshmallowNorth America

The base is cut into slabs or rounds, impaled on a skewer, and held over an open flame to caramelize the surface — a preparation method, not a variation of the base.

Troubleshooting

Grainy, sandy texture with visible sugar crystals

Insufficient corn syrup or inverted sugar; syrup cooked below 107 °C; or agitation during cooking that seeded crystal growth.Ensure corn syrup or glucose constitutes ≥15% of total sugar weight. Cook syrup to 110–112 °C without stirring once boiling. If crystals appear, remelt the set marshmallow in a bain-marie and add 10–15 g additional corn syrup per batch, then re-set.

Dense, compact mass with little or no aeration; heavy, gummy texture

Syrup incorporated into gelatin while gelatin was too warm (already melting); whipped insufficiently before gelation began; or gelatin bloom strength too low.Ensure gelatin bloom (3–4× cold water, 30–60 min) is at room temperature and fully hydrated before syrup contact. Whip until the mixture reaches a clear ribbon at ≤40 °C. Use ≥200 Bloom gelatin at ≥2% of total batch weight.

Sticky surface that never develops a skin; pieces fuse together in storage

Insufficient dusting powder; storage container not airtight; or humidity above 65% RH.Double-dust all cut surfaces. Store in airtight containers with interleaving parchment or wax paper. In humid environments, increase the cornstarch proportion in the dusting powder.

Syneresis — weeping or liquid separation after setting

Set too cold or too fast (refrigerated); or gelatin concentration too low to retain water within the matrix.Always set at room temperature (18–21 °C). Increase gelatin by 10–15% for higher-humidity environments. If weeping occurs, the base can be gently remelted and re-set.

Storage
