Masa / Nixtamal

Nixtamal · Masa is the pliable dough produced by grinding nixtamal—corn kernels cooked in an alkaline solution of water and calcium hydroxide (cal). This process, called nixtamalization, chemically transforms the corn by swelling the pericarp, releasing the hull, and increasing the bioavailability of niacin and lysine. The resulting dough has a distinctive earthy, slightly nutty flavor, a tender yet cohesive texture, and the elastic character essential for tortillas and similar preparations.

The formula

1 kg corn : 10–14 g cal : 3 L water

1 kg dried corn yields ~1.5 kg nixtamal. Grind with 150–250 g cold water per kg dried corn. Nixtamal is done when hull slips easily and kernel splits with mealy edge. Masa is correct when it holds a clean impression without sticking to palms.

Method

  1. 1Combine corn, calcium hydroxide, and water in a heavy pot. Bring to a boil over high heat, then reduce to a vigorous simmer.Calcium hydroxide penetrates the starch structure and hydrolyzes arabinoxylans only under heat, weakening the kernel from within. Boiling ensures adequate heat transfer.

Techniques that matter

Nixtamalización

Alkaline treatment chemically modifies corn, enabling it to be ground into a cohesive, adhesive dough; increases nutritional value; and develops characteristic flavor and texture. This is the foundational process of Mexican and Central American cuisine.

Milling to proper consistency

Milling must produce a smooth, uniform dough. Insufficient grinding yields a grainy masa that will not form properly; overgrinding destroys starch structure. Traditional stone mills typically produce better texture than steel mills.

Dough hydration management

Proper moisture content is critical for sheeting. Too little water causes cracking; too much causes sticking. Correct consistency holds its shape when pinched without adhering to palms.

Troubleshooting

Masa cracks when sheeting or pressing
