Tortillas de Maíz

A thin, round flatbread made from masa — nixtamalized corn dough — pressed to an even disk and cooked dry on a very hot comal with no added fat.
Identity criteria
- 1Made exclusively from masa of nixtamalized corn, not regular cornmeal, corn flour, or any wheat-based dough
- 2Pressed or hand-patted to a thin, uniform round of roughly 15–20 cm; consistent thickness is non-negotiable for even cooking

Technique
- nixtamalization
- Alkaline treatment of dried corn with cal transforms the grain: it unlocks bioavailable niacin, gelatinizes and cross-links starches so the masa coheres into a workable dough, and produces the mineral-sweet flavor that defines masa. Skipping nixtamalization yields ordinary cornmeal — no structural integrity, no characteristic taste, dough that will not bind.
- pressing or hand-patting
- A tortilla press (or practiced hands) achieves an even, thin round with consistent thickness. Uneven pressing creates hot spots, uneven cooking, areas that won't puff, and edges that crack. Thickness directly governs the balance between soft interior and lightly dried surface.
- dry comal cooking
- A very hot, ungreased comal cooks the surface rapidly while moisture inside turns to steam; the steam pocket causes the tortilla to puff and separates the thin layers. Adding fat converts dry-cooking to frying, changing the texture, preventing the puff, and producing a fried rather than steamed interior.

Common mistakes
- Using regular cornmeal, corn flour, or polenta instead of masa or masa harina — the dough will not bind and has none of the nixtamal flavor or structure
- Under-hydrating the masa, producing a dry, cracking dough that tears during pressing and yields stiff tortillas that don't puff
- Over-hydrating the masa, producing sticky dough that sticks to the press, tears during patting, and cooks unevenly
- Using a comal that is not hot enough — yields pale, doughy, steamed-tasting tortillas with no char spots and no puff
- Cooking each side too long, driving out all moisture and producing stiff cracker-like disks instead of pliable bread
- Greasing or oiling the comal — converts the dry cook to a fry, altering texture fundamentally and preventing the characteristic puff
- Not keeping finished tortillas wrapped in a cloth — they dry and lose pliability within two to three minutes of leaving the comal
- Treating masa harina as interchangeable with regular corn flour or cornstarch — they are chemically and structurally different products
Provenance
Archaeological evidence places nixtamalization and corn flatbread-making in Mesoamerica as early as 1500 BCE, associated with civilizations in present-day Mexico and Guatemala. The technique and the flatbread diffused across the region through trade, migration, and cultural exchange long before European contact. Today Mexico, Guatemala, Honduras, and El Salvador all share the corn tortilla as a foundational daily staple; no single modern nation holds exclusive origin, and the tradition predates national boundaries by millennia.
