Mornay

Sauce Mornay · A classic French derivative of béchamel, enriched with Gruyère and finished with an egg yolk–cream liaison. The cheese is melted into a prepared béchamel, producing a silken, golden-yellow sauce with a pronounced nutty-sweet depth and a glossy, fluid ribbon. It is the canonical cheese sauce of haute cuisine and the basis for gratin and cheese-sauce preparations.

The formula

50 g roux : 1 L milk + 100 g Gruyère + 2 egg yolks : 60–90 ml cream (per 1 L finished sauce)

Béchamel at 50 g roux per liter is standard for Mornay — sufficient body to withstand dilution from cheese and liaison. Gruyère at 10% of liquid weight gives proper melt and flavor without greasiness. Liaison (yolks + cream) is always added off the heat and tempered before incorporation.

Roux discipline

Liaison construction

Egg yolk + cream is a classical French liaison — an enriching emulsion that adds body and silk without the full weight of additional butter. It must be built and added with precision.

Off-heat incorporation

Once the liaison is added, the sauce must not return to a boil. A single minute above 85 °C risks irreversible yolk coagulation and a grainy, curdled texture.

Fine grating

Gruyère grated on a Microplane or fine box-grater side dissolves into the sauce matrix more readily than coarse shreds, which melt unevenly and produce strings.

Comté replaces Gruyère for a sweeter, more complex nutty profile. Widely accepted in eastern France.

Mornay NantuaFrance (Nantua, Ain)

Gruyère Mornay finished with a small amount of crayfish butter and passed through a tamis. Classic for Nantua's celebrated crayfish dish.

Mornay ParisienneFrance (Paris)

Thinner Mornay, sometimes made with a lighter béchamel and less cheese, used specifically for coating items before breadcrumbs and gratination.

Suprême sauce (derivative)France

Troubleshooting

Grainy, curdled texture with visible cheese clumps

Cheese added too quickly, or sauce returned to boil after cheese was added. Cheese proteins over-coagulated before proper emulsification.Ensure cheese is added off high heat in stages. If curdled: immediately strain through a fine sieve and process in a blender on low speed to re-emulsify, or salvage by reducing a fresh batch and combining in small amounts.

Liaison breaks — sauce turns watery with scrambled-egg fragments

Yolks added directly to hot sauce without tempering, or sauce boiled after liaison incorporation. Yolk proteins denature and seize, releasing liquid.Start over with a fresh béchamel. Temper yolks carefully (add hot liquid a teaspoon at a time until ratio is roughly equal), then add cream and incorporate gently off heat.

Sauce is too thick and tight after cooling

Over-reduced béchamel combined with insufficient liaison liquid, or too much roux relative to milk.Stir in warm milk or cream 15–30 ml at a time to restore fluidity. Mornay should coat a spoon thickly but still fall in a ribbon.

Greasy surface pooling

Storage
