sauce mousseline · A lightened derivative of a butter-based emulsion sauce, classically Hollandaise, achieved by folding in stiffly whipped cream. The cream introduces air cells surrounded by milk proteins, volumizing the sauce and lending an ethereal, barely-set texture that reads as a mousseline — a term borrowed from the fine linen whose drape it evokes.

The formula
250 g clarified butter (≈275 ml hollandaise) : 150–200 ml whipped cream (≈ 2 : 1 by volume)
The hollandaise must be glossy, tight, and fully emulsified before the cream is introduced. A standard hollandaise made with 250 g butter, 3 yolks, 1 tbsp acid, and ~60 ml water yields approximately 300–350 ml base — not 500 ml. Scale cream proportionally at roughly 150–200 ml per batch. Use cream at 30–33% fat, whipped to medium-stiff peaks — stiff enough to hold a point, soft enough to fold without deflating.
Identity
- Always begins with a stable, properly acidulated hollandaise — never a broken or greasy base
- Whipped cream is folded, never stirred or whisked in — incorporation must be gradual and gentle
- The base sauce is butter, egg yolk, and acid — never a roux-thickened milk sauce in classical mousseline
- Temperature of cream should be cold (4–6 °C); hollandaise should be warm but not hot (60–65 °C)
- Seasoned only at the end — acid balance, salt, and white pepper are adjusted after the cream is incorporated

Method

Techniques that matter
Emulsification (heat-set)
Egg yolk proteins coagulate around fat droplets, creating a lamellar film that prevents coalescence. Lecithin in yolk acts as primary emulsifier.
Folding
A spatula-driven technique that interlaces two masses by cutting through and turning, preserving incorporated air cells from the lighter phase.
Bain-marie tempering
Provides gentle, controlled heat to yolk mixture, preventing local hot spots that would coagulate protein unevenly.
Sabayon method
The initial yolk-and-acid whisking over heat builds the protein network in the same way as a sabayon, establishing the structural backbone for the final sauce.

Mousseline au Beurre BlancLoire Valley / classical French
Substitute a beurre blanc (emulsion of reduced white wine and shallots into whole butter) for the hollandaise base. Lighter, more acidic, used with fish.
Mousseline de Volailleclassical French
Velouté with whipped cream, served with poultry. Less buttery than the hollandaise version; stock proteins rather than yolk proteins provide structure.
Sauce NantuaFrance
Crayfish butter incorporated into béchamel, finished with cream. A mousseline-type preparation named for Nantua, the crayfish capital.
Sauce Diplomateclassical French

Troubleshooting
Hollandaise breaks during cream incorporation
Cream added too fast or at wrong temperature, shocking the emulsion; hollandaise too cold or too hot. → Start over with a fresh yolk, build a new hollandaise, and fold cream more slowly and at the correct temperature differential. A broken sauce cannot be saved once cream is introduced — prevention is the only fix.
Mousseline deflates and weeps serum within 15–20 minutes
Over-whipped cream, over-stirred incorporation, or holding temperature too high (>65 °C). → Use cream immediately after whipping; fold decisively in one direction; hold no warmer than 55 °C. If deflation begins, serve immediately or attempt to re-whip gently for 10 seconds — result will be diminished.
Mousseline tastes flat, greasy, or lacks acidity
Acid added before cream incorporation was insufficient, or seasoning not adjusted after folding. → A few drops of lemon juice or white wine vinegar, whisked in gently after the cream is folded, brightens flavor. Greasiness indicates hollandaise base was not fully emulsified before cream was added.
