Naan

نان · A leavened, enriched flatbread from the Indian subcontinent, traditionally cooked against the walls of a clay tandoor at very high temperature, producing a charred underside, blistered surface and a soft, steam-puffed interior. As a Foundation dough, naan is the structural base for numerous stuffed and finished variants and exemplifies high-heat dry-heat cooking of enriched yeast doughs.

The formula

100 : 7 : 12 : 3–4 : 1 (flour : yeast : liquid : fat : sugar)

Yield: 8–10 pieces from 500 g flour. All additions (yogurt, egg, milk, garlic, herbs) are incremental modifiers — they do not change the core ratio. Replace up to 30% of water with whole milk for a softer crumb. Target dough temperature 26–28 °C for optimal fermentation.

Identity

  • Must be cooked at maximum heat — ideally above 300 °C, minimum 260 °C
  • Dough must be enriched with fat (ghee or oil) — lean doughs will not puff
  • Must be leavened with yeast — chemical leavens produce a different product (like paratha or puri)
  • Must be cooked dry (on a stone, in a tandoor, or in a heavy pan) — not fried or baked in a standard oven below 250 °C
  • Must be served immediately — stale naan is a fundamental failure

Ingredients

BaseRefined wheat flour (maida)Bread flour or 00 flour acceptable. Whole wheat can replace up to 30% but produces a denser crumb.

Method

  1. 1Activate yeast in warm liquid (35–38 °C) with sugar. Rest 10 minutes until frothy.Proves viability and jump-starts fermentation. If no froth appears within 15 minutes, the yeast is dead — discard and start fresh.
  2. 2Combine flour, salt and any dry aromatics. Add yeast mixture, yogurt, egg (if using) and ghee. Mix to a shaggy mass, then knead 8–10 minutes to a smooth, elastic dough.Kneading develops gluten network required for gas retention and the characteristic soft, layered crumb.
  3. 3Place dough in a lightly oiled bowl, cover with plastic wrap. Ferment at room temperature (24–28 °C) 60–90 minutes until doubled.Primary fermentation builds flavor complexity, CO₂ volume and the open crumb structure.
  4. 4Punch down, divide into 8–10 equal portions (80–100 g each). Shape into rounds or teardrops. Rest, covered, 15 minutes (bench rest).Bench rest relaxes gluten for easy rolling/flattening and ensures even final proof.
  5. 5Cook in a screaming-hot dry pan (cast iron or tawa) 2–3 minutes per side until charred spots appear and internal temperature reaches 90 °C. Or cook 2–3 minutes directly over a gas flame, turning once.Blisters form from remaining yeast steam and Maillard reaction. Char is structural and aromatic, not decorative. Under-cooking produces a pale, chewy, dense result.
  6. 6Brush immediately with ghee. Serve within 10 minutes.Ghee adds richness and prevents surface drying. Naan stales within 30 minutes — timing is structural to the dish.

Techniques that matter

High-heat dry-heat cooking

Mimics the tandoor's 450–500 °C wall. Creates char, rapid steam puff and distinctive blistered crust impossible to replicate at lower oven temperatures.

Yeast fermentation (primary proof)

Distinguishes naan from unleavened flatbreads (roti, paratha). Fermentation develops flavor compounds and creates the open, airy crumb structure.

Gluten development via kneading

A strong, elastic gluten network is non-negotiable — it traps CO₂ from fermentation and steam from cooking, enabling the characteristic puff.

Steam puffing

Water inside the dough flashes to steam at high heat, expanding the bread outward. The hot pan surface and enclosed gas create the pocket.

Variations & derivatives

Peshwari naanPakistan, Northern India

Stuffed with a mixture of coconut, almonds, cashews and sometimes raisins. The stuffing adds moisture and sweetness inside the bread.

Garlic naanPan-Indian (global)

Fresh minced garlic kneaded into dough or pressed onto the surface with ghee before cooking. The most common commercial variant.

KulchaPunjab, India

Uses leavened dough but is stuffed (often with spiced potato, cauliflower or paneer) and may be baked on a tandoor wall rather than in a pan. Distinct from plain naan.

Roghani naanPunjab, Pakistan

Brushed heavily with ghee or butter after cooking. Richer, more indulgent finish.

Keema naanIndian subcontinent

Stuffed with spiced minced lamb before cooking. The meat must be fully cooked and relatively dry before stuffing.

SheermalLucknow, India

Uses saffron-infused milk and more sugar than standard naan. A sweeter, saffron-scented variant often served with kebabs.

Substitutions

  • Maida (refined flour)Bread flour or 00 flourBoth have sufficient gluten-forming protein. 00 will produce a slightly more tender, extensible dough.
  • GheeNeutral vegetable oilOil is lower-smoke-point but acceptable. Ghee adds the characteristic nutty, clarified-butter aroma. Butter burns more easily at tandoor temperatures.
  • YogurtExtra milk or kefirYogurt's acidity aids gluten relaxation and adds tang. Milk alone will produce a good naan but slightly less tender. Kefir works as a 1:1 substitute.
  • Fresh yeastInstant dry yeastUse at 1/3 the weight of fresh yeast. Instant yeast can be mixed directly with flour; active dry yeast should still be bloomed in warm liquid.
  • TandoorCast-iron pan on highest burner heatA ripping-hot cast-iron skillet is the best home substitute. Pre-heat minimum 5 minutes until the pan begins to smoke. Pizza steel or baking stone in a maximum-heat oven (260 °C+) also works.

Troubleshooting

Naan comes out dense and flat — no puff

Oven or pan too cold. Insufficient fermentation (under-proofed dough). Dough too tight from over-kneading or insufficient liquid.Ensure cooking surface is at maximum heat — it must smoke before the dough goes in. Extend primary fermentation to 90 minutes at warm room temperature. Target dough temperature 26–28 °C.

Bottom scorches but top stays raw

Heat source too concentrated below (open flame) without turning. Dough too thick. Insufficient moisture in dough.Use a heavy pan to distribute heat evenly. Roll or stretch dough to 5–7 mm. Ensure dough contains adequate yogurt or milk for steam generation.

Naan is tough and rubbery

Over-worked dough or insufficient fat. Serving stale (naan must be eaten within minutes of cooking). Using cold dough.Use fat at 3–4% of flour weight minimum. Work dough just to smooth — 8 minutes by hand, 5 by stand mixer. Cook and serve immediately.

Naan sticks to the cooking surface

Insufficient fat on pan surface. Pan not hot enough — dough steams rather than sears.Lightly grease cast iron with a high-smoke-point oil. Pre-heat until the pan is genuinely smoking before placing dough.

Storage

Keeps 4–6 hours at room temperatureWrap tightly in a clean kitchen towel or place in a closed cloth bag. Do not refrigerate — refrigerator cold air stales bread within 2 hours. Reheat: Best not reheated — the char and puff are gone. If necessary, reheat in a hot dry pan 1 minute per side, though quality degrades significantly. Freeze for up to 2 weeks; thaw at room temperature and revive in a hot pan.
