nukazuke base
ぬか床 · A live, maintained fermentation medium of cooked rice bran (nuka), water, and salt, seeded with lacto-fermenting bacteria and kept alive through daily turning. Vegetables are buried in the bed and become nukazuke pickles within 1–7 days. The base is a foundational Japanese preservation technique and a reusable culture that deepens in complexity over months of maintenance.

The formula
1 part nuka (by weight) : 1 part water (by weight) : salt at 10–15 % of nuka weight
Salt is calculated as a percentage of nuka weight. In warm seasons (above 22 °C) use the higher end (15 %); in cool seasons use 10 %. The bed must maintain a paste-like consistency — moist enough to coat vegetables but not soupy. New beds are 'seeded' with 30–50 g of active nukazuke or a small cucumber rind to inoculate with Lactobacillus.
Identity
- Cooked (parboiled) nuka is the structural base — raw nuka has sharp bitterness and poor texture
- Salt concentration of 10–15 % of nuka weight is the minimum to suppress spoilage organisms without arresting Lactobacillus activity
- Daily turning (mixing) of the bed is non-negotiable — it equalises temperature, redistributes bacteria, and releases built-up gases
- The bed must stay moist and anaerobic below the surface — exposed dry crusts invite mold
- A new bed requires a bacterial seed (from an existing bed or quick-pickled vegetable) to establish a healthy lacto-flora before use

Method
- 1Simmer fresh rice bran in water (enough to just cover) for 15–20 minutes until soft and pasty, then cool completely to room temperature.Cooking gelatinises the bran starches, producing a cohesive paste that coats vegetables evenly and provides fermentable substrate for Lactobacillus. Raw nuka remains granular and bitter.
- 2Combine cooled cooked nuka with salt (10–15 % of nuka weight) and remaining water. Mix vigorously to achieve a moist, thick paste that holds together when squeezed but drips slowly — the consistency of damp sand.Salt draws moisture from the nuka and creates the anaerobic brine environment necessary for homofermentative Lactobacillus, suppressing aerobic spoilage organisms.
- 3Transfer to a non-reactive vessel (glass, ceramic crock, or food-grade plastic). Bury a small piece of cucumber rind or radish leaf, or add 30–50 g of active nukazuke. Cover the surface tightly with plastic wrap to create an anaerobic seal, then place the lid on loosely.The seed introduces a proven Lactobacillus culture, ensuring dominance from day one. Tight surface sealing prevents desiccation while a loose lid allows CO₂ to escape during active fermentation.
- 4Store at room temperature (ideally 18–24 °C). Turn and mix the bed thoroughly once every 24 hours, rotating from the bottom to the top and breaking up any dry crusts.Turning equalises bacterial distribution, prevents anaerobic pockets, releases CO₂, and keeps the entire bed active. Skipping even one day in warm weather allows spoilage bacteria or surface molds to establish.
- 5After 3–5 days the bed should smell pleasantly sour and yeasty. Begin burying vegetables: whole cucumbers (halved if large), daikon wedges, eggplant, carrot sticks, or napa cabbage leaves. Bury for 12 hours to 7 days depending on vegetable density and desired intensity.Vegetables draw moisture and lactic acid from the bed while releasing their own sugars, feeding and sustaining the culture. Shorter burials produce mild pickles; longer burial deepens umami and sourness.
- 6After each use, briefly re-mix the bed. If it becomes too dry (crusty, pulling away from vessel walls), add water a tablespoon at a time. If too soupy, add a handful of fresh cooked nuka. Every 2–4 weeks add a tablespoon of salt to maintain salinity.The bed is a living system requiring balance. Evaporation and vegetable moisture shift the water activity; periodic salt replenishment maintains the selective pressure that keeps Lactobacillus dominant.
Techniques that matter
Lacto-fermentation
Lactobacillus species dominate the nukazuke environment, converting vegetable and nuka sugars into lactic acid (pH ~3.8–4.2), which preserves vegetables and creates the characteristic sour, complex flavour without heat or vinegar.
Anaerobic fermentation
The paste-like bed excludes oxygen below the surface. Lactobacillus are facultative anaerobes that thrive in this environment, while aerobic spoilage organisms (mold, unwanted bacteria) are suppressed.
Starch gelatinisation
Rice bran contains starch that gelatinises during cooking, producing a cohesive paste that coats vegetables evenly and provides fermentable substrate for Lactobacillus.
Enzymatic softening
Endogenous plant enzymes (pectinases, cellulases) in buried vegetables continue acting during fermentation, partially breaking pectin and cellulose and creating the characteristic tender-crisp texture of nukazuke pickles.
Variations & derivatives
Kuro-nukaJapan — northern regions
Nuka toasted darker (with soy sauce or shio-ko added) before mixing. Produces a deeply savoury, almost smoky bed used for pickles with an earthy, dark character.
Shio-nukaJapan — coastal regions
Additional shio-ko (salted rice bran paste) or kombu added to the bed. Increases salt content and introduces glutamates from seaweed, boosting umami intensity.
Nuka-dashiJapan — Kyoto and Kansai
The cooking water from parboiling nuka is used as a dashi-style seasoning base for soups and dressings, similar to how the bed is a byproduct resource.
Jang-jang-namulKorea
A related Korean bran-fermented pickle using dried chili powder and gochugaru added to the bran bed, producing a spicy red nukazuke-style pickle.

Troubleshooting
Surface mold (white, grey, or blue-green fuzzy growth)
Insufficient daily turning, dry surface crust, or temperatures above 28 °C causing stress and sporulating bacteria. Also caused by using non-sterile vessels or introducing contaminated vegetables without burying them properly. → Skim off all visible mold. Add 1–2 % more salt by weight, mix thoroughly, and ensure the surface is covered completely with plastic wrap. If mold has penetrated deeply (slimy or foul-smelling zones), discard the affected portion and rebuild the bed.
Bed smells putrid, slimy, or like ammonia
Over-fermentation from excessive temperature (>30 °C) or too-low salt concentration, allowing proteolytic and putrefactive bacteria to outcompete Lactobacillus. May also result from burying strongly spiced vegetables (garlic, ginger) that inhibit the culture. → Drain excess liquid. Add 5–10 % more salt and a fresh handful of cooked nuka to dilute spoilage compounds. Add a new bacterial seed. Turn twice daily for 3 days. If ammonia smell persists, the bed must be rebuilt from scratch.
Pickles emerge too salty or too bland
Too salty — salt percentage too high for the vegetable mass, or vegetable buried too long. Too bland — insufficient fermentation time, or bed is too new (< 7 days old) to have developed adequate lactic acid. → For overly salty pickles, rinse briefly before serving. For bland pickles, extend burial time by 6–12 hours per session and ensure the bed is at least 10 days old before regular use. The bed will become more potent as it matures.
Bed is too dry and crumbly to coat vegetables
Evaporation over weeks without water replenishment, especially in dry climates or if the lid does not seal tightly. → Add water 1–2 tablespoons at a time, mixing thoroughly, until the paste holds together when squeezed. The ideal consistency is like damp modelling clay — it should cling to a vegetable without sliding off.
