Pesto Genovese
Pesto alla Genovese · A cold, raw herb sauce from Liguria, made by pounding fresh basil with pine nuts, garlic, aged cheese, and extra-virgin olive oil into a vibrant green emulsion. The canonical Ligurian version uses only Genovese basil (Ocimum basilicum var. genovese), a cultivar with smaller, more tender leaves and higher eugenol content than common basil. It is a foundation condiment — not cooked, not heated — intended as a finish applied to hot pasta off the flame.

The formula
basil 60 g : pine nuts 20 g : Parmigiano 15 g : oil 10 g : garlic 1 clove
Scale by the basil weight. Multiply all other ingredients proportionally: pine nuts ≈ ⅓ basil; Parmigiano ≈ ¼ basil; oil ≈ ⅙ basil by weight. Yields ~110–120 g sauce, enough for 350–400 g dry pasta. For 1 kg dry pasta, double the batch.
Identity
- Genovese basil (Ocimum basilicum var. genovese) — smaller leaves, sweeter and more aromatic than common basil; no stems, no wilted leaves, no heat-touched basil
- Mortar and pestle (màggio in Ligurian) — stone or marble, not a food processor
- Parmigiano-Reggiano 24+ months aged, grated fine, never pre-grated
- Pine nuts — Mediterranean Pinus pinea, not China pine or pistachios
- Taggiasca or equivalent cold-pressed mild extra-virgin olive oil — never refined or strong oil
- No cooking, no heat — applied to hot pasta off the flame only
Ingredients

Method
- 1Place the garlic clove and salt crystals in the mortar. Pound in a circular rocking motion until a smooth, creamy paste forms with no visible pieces.Salt's abrasive crystals mechanically disrupt garlic cell walls; the mortar's grinding creates a fine, uniform paste without generating the frictional heat a knife or board would produce.
- 2Add the basil leaves a few at a time. Pound with a vigorous circular-and-grinding motion, pressing the leaves against the mortar wall, until a coarse, vibrant green paste forms.Pounding ruptures cell walls non-destructively, releasing eugenol-rich essential oils while preserving chlorophyll's bright green magnesium center. The large mortar surface dissipates any frictional heat instantly — unlike a blender.
- 3Add the pine nuts. Continue pounding and grinding until the paste is smooth and cohesive.Pine nut cells are rich in oleic and linoleic acids; crushing them releases lipids that begin to emulsify with the basil's aqueous phase, creating a stable suspension for the oil to come.
- 4Add the grated Parmigiano (and Pecorino if using). Work it into the paste with a folding and pounding motion.Melted or ground cheese would clump; adding it to the already-emulsified paste allows the proteins and salts to integrate without seizing, contributing umami and body.
- 5Drizzle in the olive oil very slowly while continuing to stir and pound. The sauce should emulsify into a smooth, glossy, bright-green consistency.Oil is hydrophobic; the gradual incorporation, aided by the mechanical agitation of the pestle, forces oil droplets into the aqueous basil phase, forming an oil-in-water emulsion stabilized by lecithins in the basil and proteins in the cheese.
- 6Taste and adjust salt. The sauce should taste intensely of basil, be slightly salty, and coat a spoon thickly. If dull, a tiny squeeze of lemon juice (≈3 drops) can refresh color — but this is not traditional.Basil flavor is volatile and diminishes quickly; the sauce should be used immediately or stored properly. The salt level must be assertive because it will be diluted when tossed with pasta.
Techniques that matter
Mortar and pestle pounding
The stone mortar absorbs zero heat and provides a large cold grinding surface. The wooden or plastic pestle tip compresses rather than shears basil cells, preserving chlorophyll and eugenol. A food processor's metal blade generates 15 000+ RPM friction heat that inactivates chlorophyll and oxidizes phenolics in seconds.
Emulsification by mechanical agitation
Pesto is a temporary oil-in-water emulsion. Basil's lecithin-like phospholipids and cheese proteins coat oil droplets, preventing coalescence. The emulsion is thermodynamically unstable — it will separate — but is kinetically persistent if made properly.
Working cold
Basil's chlorophyll degrades above 50 °C (122 °F) to pheophytin, turning the sauce olive-gray. Essential oils (eugenol, linalool, citral) evaporate above 60 °C. All equipment and ingredients must be cold; work fast.
Application off-heat
Tossed with freshly boiled pasta that has been drained and returned briefly to the pot off the flame, the residual heat (≈70–80 °C at the surface) is enough to warm the sauce gently, marry the starch slurry, and lightly cook any residual raw garlic flavor without destroying the basil.
Variations & derivatives
Pesto alla TrapaneseTrapani, Sicily
Replaces pine nuts with blanched almonds. Adds ripe tomatoes (sometimes), and often uses Ricotta or Caciocavallo instead of Parmigiano. Sweeter, more acidic, and lighter.
Pesto alla Genovese con NociLombardy
Replaces pine nuts with walnuts. A northern substitute using locally available nuts. Nuttier, more bitter, less creamy — but serviceable.
Pesto di RucolaCentral and Northern Italy
Replaces basil entirely with rocket (arugula). More peppery, piquant, and aggressive. Often includes Parmigiano and garlic. Significantly more shelf-stable due to lower polyphenol oxidase activity.
Pesto di Pra'Genoa Pra' district
The most traditional Genovese version: uses exactly Genovese basil, Taggiasca olives, and a small amount of marjoram. The canonical form from which all others deviate.
Pesto with Sun-Dried TomatoesModern Italian-American
A kitchen variation adding 20–30 g reconstituted sun-dried tomatoes to the mortar. Adds umami and acidity but moves the foundation away from its classical identity.

Substitutions
- Pine nuts → Walnuts or blanched almonds — Acceptable in emergencies. Walnut has higher polyunsaturated fat and more bitter phenolics; blanched almonds are closer in fat profile but coarser. Both change texture and flavor noticeably.changes result
- Parmigiano-Reggiano → Grana Padano 16+ months — Nearly identical flavor profile and moisture content. Often used in non-DOP versions. The difference is negligible in a sauce where aged flavor is the goal.
- Genovese basil → Thai or holy basil — Thai basil has anise (estragole) and slightly spicy notes; holy basil (tulsi) is peppery and clove-forward. Neither resembles Genovese basil's sweet, slightly minty eugenol character. Results will be distinctly different — acceptable when Genovese basil is unavailable.changes result
- Mortar and pestle → Food processor (small bowl) — Produces an acceptable but inferior result: warmer, more oxidized, slightly bitter. Run in 3–4 short bursts with the processor jar and blade pre-chilled. The color will be duller and the flavor more muted. Acceptable only when time is critical.changes result
Troubleshooting
Sauce turns olive-gray or brownish within minutes
Basil was exposed to heat (warm mortar, hot food processor, cooked ingredients) or was bruised too aggressively, activating polyphenol oxidase which converts phenolic compounds to quinones — these polymerize into brown pigments. → Start with a pre-chilled mortar (rest it on ice for 10 min). Work faster. If using a food processor, freeze the blade and bowl for 15 min. Add a tiny drop of lemon juice (ascorbic acid) immediately to inhibit oxidation.
Sauce separates into oil pooled on top and watery green liquid below
Emulsion has broken — either the oil was added too fast, the cheese proteins were insufficient to coat oil droplets, or the sauce was stored incorrectly (exposed to air, warmth, or not covered with oil). → Re-pound vigorously with a small amount of cold water or more cheese, adding oil slowly. For storage: press plastic wrap directly onto the surface, exclude all air, and refrigerate. The top layer of oil in a properly stored jar acts as a seal.
Sauce tastes bitter or has an acrid aftertaste
Basil stems or large veins were included (bitter caffeic acid derivatives), the garlic germ was left in (solanine-like alkaloids), or the food processor overheated the basil, breaking down chlorophyll to bitter pheophytin. → Pick basil leaves carefully, removing all stems and large central veins. Remove garlic germ. If bitterness is from heat, the batch is compromised — use it as a background note in a cooked dish rather than fresh.
Sauce lacks punch and tastes flat
Old or cold-struck basil with depleted eugenol; too much cheese masking the herbal character; excessive oil diluting flavor; basil-to-oil ratio was wrong. → Use only fresh, room-temperature basil. Reduce cheese to the minimum. Add 2–3 drops of pasta cooking water (which contains starch and minerals) when tossing to lift the flavors and bind the sauce to the pasta.
