Pickled Mustard Greens
榨菜 · A lacto-fermented condiment base made by salting and compressing fresh mustard greens until they release their liquid, then allowing them to ferment anaerobically at room temperature. The result is a deeply savory, sharp, slightly funky preserved green with pronounced mustard heat and a firm, chewy texture. It is a foundational flavor agent in Sichuan, Hunan, and broadly Chinese cooking — not a finished dish but a building block that adds acid, umami, funk, and heat to braises, stir-fries, noodle soups, and dumplings.

The formula
20:1 greens : salt by weight
Scale freely. 5% salt by weight of greens. 500 g greens → 25 g salt. 2% works in cool conditions (below 18 °C) but 5% is standard for reliable fermentation. Pack tightly into a clean jar — greens compress and self-brine. No added water; liquid is drawn from greens by osmosis. Ferment 5–14 days at room temperature (18–22 °C), then refrigerate. Finished yield is approximately 60–70% of fresh green weight.
Identity
- Mustard greens — Brassica juncea with thick stems and lobed leaves, not spinach or bok choy; stem thickness and glucosinolate content are non-negotiable
- Salt-only cure — no vinegar, no sugar, no spices added to the base; flavors develop purely from lacto-fermentation
- Anaerobic lacto-fermentation — greens packed tightly with no air pockets; liquid rises above the surface to create the oxygen barrier
- 5–7 day minimum ferment at room temperature — quick brining does not produce the same depth of funk, tang, or mustard heat
- Drained and rinsed before use — salt concentration is extreme and must be purged before cooking
Ingredients

Method
- 1Trim and wash the mustard greens. Pat or spin completely dry.Surface moisture dilutes the salt concentration at the cure site. Dry greens ensure salt makes direct contact with tissue for effective osmosis.
- 2Toss greens with the salt, working it thoroughly into the leaves and especially the thick stems.Even salt distribution initiates uniform moisture migration. Stems hold the most water and require the most mechanical working.
- 3Pack the salted greens into a clean, dry glass jar in tight, compact layers, pressing down hard with every handful to eliminate air.Lacto-fermentation requires anaerobic conditions. Any trapped air pocket allows aerobic spoilage before LAB dominate. Packing is the most critical technique.
- 4Place a weight on top (a smaller jar, zip-lock bag of brine, or folded ball of clean plastic) to keep greens submerged under their own liquid.Submersion is the oxygen barrier. Greens will release liquid within 2–6 hours as osmosis draws intracellular water out. If liquid does not rise above the surface within 8 hours, add a 3% brine (30 g salt per liter water) to top up.
- 5Seal loosely or cover with a cloth and a rubber band. Ferment at room temperature (18–22 °C) for 5–14 days, tasting from day 5 onward.LAB activity peaks between 18–22 °C. Below 15 °C fermentation stalls; above 25 °C spoilage risk increases. The target flavor is tangy, funky, with pronounced mustard bite — not merely salted.
- 6Drain the fermented greens. Rinse briefly under cold water. Squeeze out excess liquid. Use immediately or store refrigerated in a sealed container.Rinsing removes surface salt and halts fermentation. Refrigeration below 4 °C dramatically slows residual LAB activity, extending shelf life. Squeezing ensures even seasoning when the greens are chopped and used.
Techniques that matter
Dry-salt lacto-fermentation
The 5% salt ratio is the classical dry-cure method for Chinese mustard greens. No starter culture is needed; wild LAB on the leaf surface dominate. Salt selectively inhibits Enterobacteriaceae and promotes Leuconostoc and Lactobacillus species that produce lactic acid and complex flavor compounds.
Forced brine via compression
Tightly packed greens self-brine through osmosis. The liquid that emerges is a natural 3–4% NaCl solution — ideal for LAB growth. This is why no additional brine is added; it would dilute the salt concentration and risk a sluggish or failed ferment.
Equilibrium curing
The 20:1 ratio (5% salt by weight) is an equilibrium method: greens release approximately 70–75% of their weight as liquid, yielding a natural brine concentration of roughly 6–7% salt — high enough to suppress spoilage organisms, low enough for LAB to function. This is the same principle used in traditional sauerkraut and gravlax.
Rinsing and pressing before use
Finished pickle is extremely salty and acidic. Rinsing purges the surface; pressing removes inter-leaf liquid that would otherwise dominate a dish. The pressed greens are then typically chopped and briefly stir-fried in oil to caramelize before being added to soups or braises.
Variations & derivatives
Zha cai (Sichuan stem mustard pickle)Sichuan, China
Uses Brassica juncea var. tumida — a variety bred for enormous swollen stems. The stems are the prize; leaves are discarded. Fermented with approximately 10% salt by weight and longer cure (3–4 weeks). More expensive, used as a luxury garnish. Core technique is identical.
Sichuan quick-pickled mustard greens (suan men zi)Sichuan, China
Stems and leaves are briefly blanched, shocked, then soaked in a hot brine of rice vinegar, sugar, salt, and chili oil. Ferments for 24–48 hours only. Softer texture, brighter color, less depth. Used in cold dishes. The lacto-fermented version is the true Foundation; this is a speed variant.
Jie cai (Kashgar-style)Xinjiang, China
Mustard greens are sun-dried for 1–2 days before salting. Drying concentrates sugars and reduces moisture, resulting in a longer shelf life and chewier texture post-ferment. Salt ratio remains the same; drying time adds complexity.
Paocai (general Chinese pao cai)Northeast China (Dongbei)
Broader category of water-brined pickles. Mustard greens are one of many vegetables in a 5–8% salt water ferment, often with ginger and dried chilies. Less concentrated than the dry-salt method. Used in hot pots and stews.
Tae geummu (Korean mustard green kimchi)Korea
Mustard greens (gat) are salted, rinsed, then coated in a paste of gochugaru, garlic, ginger, fish sauce, and glutinous rice flour slurry. Short-fermented (2–5 days at room temp) before refrigeration. The wet paste coating introduces fermentation via the paste, not the leaf surface.

Substitutions
- Pickled mustard greens → Sauerkraut (well-drained) — Sauerkraut uses the same lacto-fermentation principle on cabbage. The flavor is milder (no mustard heat, less glucosinolate punch) but the funk, acid, and texture are broadly analogous. Use 1:1 by weight.
- Pickled mustard greens → Capers in brine — Capers provide a sharp, briny, fermented vegetal note and umami. They do not replicate the mustard heat or the chewy texture. Best as a garnish contribution in a sauce. Not a safe flavor equivalent.changes result
- Pickled mustard greens → Fermented black beans (douchi) — Douchi provides deep umami and funk, but zero acid and no textural element. Used together with mustard greens in many Sichuan dishes for layered complexity. Not interchangeable alone.changes result
Troubleshooting
Greens produce no liquid after 12 hours and surface is dry
Salt was not worked in thoroughly, or ambient humidity is extremely low causing surface salt to cake without drawing moisture. Air pockets may remain, preventing uniform osmosis. → Add 1–2% additional salt by weight directly on top. Press down again with force. If still no brine in 4 hours, add a prepared 3% brine (30 g salt dissolved in 1 L water, cooled) just to cover the greens. This restarts osmosis.
White film or foam on the surface of the brine
Kahm yeast — a wild aerobic yeast that can grow on the surface if the brine is not fully submerging the greens or if the seal is too loose, allowing air exchange. Usually harmless but indicates fermentation is too aerobic. → Skim off the foam. Press greens back down to ensure submersion. Add a small amount of brine if needed. Taste — if flavor is still good (tangy, not rotten-smelling), the batch is salvageable. If it smells putrid or slimy, discard.
Pickle is too salty to use even after rinsing
Rinsing was insufficient, or the greens were fermented too long, concentrating salt as liquid evaporated. → Soak the drained greens in cold water for 10–15 minutes, then squeeze dry. Alternatively, blanch briefly (30 seconds) in boiling water, which extracts surface salt quickly. Adjust seasoning in the finished dish with soy sauce or stock.
Fermented greens taste flat and only salty — no tangy funk
Temperature too cold (below 15 °C), or fermentation time insufficient. LAB activity was minimal; the greens are essentially just salted, not fermented. → Leave at room temperature for several more days. Ideal range is 18–22 °C. The funk compounds (diacetyl, organic acids, branched-chain aldehydes) develop with time and warm LAB activity.
