The result is a small, pop-textured condiment with sharp, lingering heat and a sweet-sour backbone. Each seed functions as a micro-dose delivery vehicle, carrying vinegar, sugar and salt in a single bite, distributing acidity, brightness and controlled heat across a dish.

The formula
1:2:0.5:0.125 by weight — seed : vinegar : sugar : salt
100 g seeds + 200 g white wine vinegar (5–6% acidity) + 50 g sugar + 12 g salt = ~280 g finished product. Seeds roughly double in mass when fully plumped. Small batches of 50–100 g seed are practical for most kitchens. Scale freely by weight.

Method
- 1Rinse the mustard seeds under cold water to remove dust, drain well. Transfer to a bowl, cover with cold water by 5 cm, add a pinch of salt and leave to soak for 30 minutes.Initial soaking begins hydration of the seed's outer husk and accelerates the subsequent pickling. Salt drives moisture inward osmotically, shortening cooking time and ensuring even plumping.
- 2Drain the soaked seeds. Combine vinegar, sugar and salt in a stainless or enamel saucepan. Bring to a gentle simmer over medium heat, stirring to dissolve sugar and salt completely.Dissolving sugar and salt in vinegar before adding seeds ensures even seasoning distribution and prevents localised hot spots that could burst seeds during cooking.
- 3Add the drained seeds to the simmering vinegar. Reduce heat to low. Cook at a bare simmer (85–92 °C), partially covered, for 25–35 minutes, until seeds are visibly plumped—roughly doubled in size with a soft, yielding texture when pressed between fingers. - 5Transfer to a clean, dry glass jar, pressing seeds down gently. Pour enough cooking liquid over to submerge them completely. Seeds must be fully covered. Seal and refrigerate.Full submersion in the acidic brine is the only preservation requirement for refrigerated storage. Any seed above the liquid surface will mold.
Techniques that matter
Osmotic hydration
Pre-soaking seeds in salted water accelerates water uptake through the seed coat, reducing cooking time and ensuring uniform plumpness from centre to husk.
Acid denaturation of myrosinase
Brown mustard seeds contain sinigrin and myrosinase, separated in the intact seed. Cooking in vinegar partially denatures myrosinase, moderating glucosinolate hydrolysis that creates allyl isothiocyanate—preventing overwhelming heat while preserving a clean, bright mustard bite.
Controlled simmer (85–92 °C)
Above 95 °C the pectin in the seed's middle layer degrades unevenly, making seeds burst or become mealy. Below 80 °C acid penetration is too slow and seeds remain hard at the centre.
Evaporative concentration
Cooling uncovered after cooking drives off water vapour but retains acetic acid (low volatility at this temperature), concentrating the syrup and ensuring a clingy coating on each seed—essential for flavour delivery.

- white wine vinegar → malt vinegar — Acceptable. Malt adds faintly smoky, malty depth. Use at the same weight. Slightly darker final colour. The most historically authentic substitute in British contexts.
- brown mustard seeds (B. juncea) → black mustard seeds (B. nigra) — B. nigra has more pungent heat and a slightly smaller seed. Use at equal weight; the result is sharper and more aromatic. A traditional substitute, especially in European preparations.
- brown/black mustard seeds → yellow mustard seeds (Sinapis alba) — Yellow seeds are much milder and lack the characteristic bite. They also have a softer texture when cooked. Reduce to 80% weight. Troubleshooting
Seeds remain hard and crunch at the centre after cooking
Insufficient cooking time or temperature below 80 °C. The acid never penetrated the seed's starchy interior. Common when vinegar is added cold and not brought to a simmer. → Return seeds to the vinegar and simmer for an additional 15–20 minutes. Test by pressing a seed flat—it should compress without resistance. If still hard after 60 minutes total, the seeds are old; extend to 90 minutes and add a splash more vinegar.
Seeds burst or turn to mush
Vigorous boiling (above 95 °C) or cooking in an aluminium pan, where acid reacts with the metal and creates uneven heat spots. Also caused by over-stirring once seeds begin to plump. → Restart with fresh seeds and maintain a gentle simmer with only occasional gentle stirring. If already mushy, use as a mustard paste in dressings rather than as a garnish.
Mold on the surface after refrigeration
Seeds were not fully submerged in the vinegar brine. Also caused by using damp utensils when bottling. → Remove the surface layer of seeds (2–3 mm) and any mold. Bring the remaining seeds to a boil in their liquid for 2 minutes, then cool and rebottle with fresh liquid covering by 1 cm. Use a clean, dry spoon for future serving.
Overpowering, acrid heat overwhelming the sweet-sour balance
Not enough sugar relative to vinegar, or insufficient cooking time. Under-cooked seeds have full enzymatic heat (allyl isothiocyanate) still active. → Add 10–20 g sugar to the existing liquid, bring to a simmer for 5 minutes, cool and rebottle. Sugar modulates perception by stimulating sweet receptors that compete with bitter/pungent pathways.
