The formula

For a 750 g yield: 500 g whole-milk yogurt, 250 g cucumber (grated, salted, squeezed), 7.5 g roasted cumin powder, 5 g salt. Scale the vegetable component between 1/2 and 1 part per 2 parts yogurt depending on desired density. Black salt (kala namak) and green chili are traditional but optional accents; include at 1–2 g each.

Techniques that matter

Salt-extraction of cucumber

Cucumber is 95% water. Without salt-extraction, the released water dilutes the yogurt's fat and protein network, thinning the raita and causing it to separate over time.

Roasting and grinding cumin

Dry-roasting drives moisture from the seed and caramelizes surface sugars, transforming cumin from harsh and raw to deeply aromatic. The ground powder disperses through fat more effectively than whole seeds in a cold preparation.

Acid-protein interaction control

Yogurt's casein proteins surround fat globules (natural emulsifiers). Salt increases the ionic strength of the yogurt serum, tightening the protein network and preventing fat coalescence. Too much salt can over-firm the gel — hence the 1% cap.

Variations & derivatives

boondi raitaNorth India, universally popular

Fried chickpea-flour (besan) droplets soaked in warm water until pliable, then folded into yogurt. Adds porosity and a pleasant crunch-sink texture. The boondi batter (besan + water) must be thin enough to fall through a slotted spoon in discrete 5–8 mm droplets. Boondi must be softened before adding or it will be hard and will break the yogurt.

pomegranate raitaRajasthan, Gujarat, Maharashtra

Fresh pomegranate arils folded in whole. Sweet-tart crunch against the creamy yogurt. Often made with boondi as well.

onion raitaPan-Indian

Very finely minced raw onion (or briefly soaked in ice water to tame sharpness). Added in small quantity as a textural accent.

verdant raitaSouth India

Thin, more liquid yogurt-based raita with cucumber or raw banana, curry leaves, and green chili. Less thick than northern versions, closer to a drinking consistency.

bhuna jeera raitaKashmir

Cumin-forward with a tempering of ghee-fried cumin and occasionally asafoetida (hing) poured over the finished raita — an exception to the no-cooking rule, adding a warm aromatic top note.

Troubleshooting

Raita is thin and watery

Cucumber was not salted and squeezed; or yogurt was already very whey-y; or cucumber was overseasoned and has continued to exude liquid.Salt-extract cucumber for a full 10 minutes and press dry. If the yogurt base is thin, strain it through cheesecloth for 20 minutes before use. If raita has already been made, strain it through a fine sieve and whisk in a small amount of strained Greek yogurt to thicken.

Cucumber turns mealy and gray

Cucumber was oversalted or left too long after salting before squeezing; or raita was held too long at room temperature before refrigerating.Use cucumber immediately after squeezing — do not salt and refrigerate for hours. Serve raita within 2 hours of final assembly, or keep tightly covered in the refrigerator.

Fat separation (white streaks, grainy texture)

Yogurt was low-fat or the salt concentration exceeded ~2% of the yogurt weight, which destabilizes the protein-fat emulsion; or cold yogurt was combined with hot tempering.Use full-fat yogurt only. Limit salt to 1% of total batch weight. Never pour hot fat over cold yogurt — bloom spices in cool or room-temperature ghee for tempering applications.

Boondi is hard in boondi raita

Boondi was added directly from frying without soaking; or soaking water was not warm enough.Always soak boondi in warm (not boiling) water for 10–15 minutes until pliable. Drain, squeeze gently, and fold into yogurt. Hard boondi indicates the chickpea flour has dehydrated and will not soften.

Storage

Keeps 2–3 daysCovered airtight container, refrigerated. Do not freeze — yogurt's protein network collapses and the texture becomes grainy and unappetizing upon thawing. Reheat: Not applicable. Raita is served cold. If removed from refrigeration for service, limit exposure to 1 hour maximum.
