Rice Paper

Bánh tráng · A delicate, translucent sheet formed from a thin rice-flour-and-water batter cooked on a smooth surface. The batter is spread paper-thin, then steamed, blanched, or griddle-cooked until the starch gelatinizes and sets into a flexible, semi-translucent skin. It is an edible container, used as found, without baking or frying. The master ratio governs batter concentration: thin enough to spread freely, thick enough to hold cohesion when hydrated and rolled.

The formula

1 part rice flour : 1.6–1.8 parts water by weight, plus 0.5–1% salt by flour weight

Batter should coat a spoon thinly — the consistency of heavy cream. Tapioca starch at 5–15% of flour weight is common in commercial and many regional versions for added pliability and sheen.

Method

  1. 1Combine rice flour and salt in a bowl. Gradually whisk in warm water (40–50 °C) until a smooth, thin batter forms — the consistency of heavy cream or thin pancake batter. Resting allows residual starch crystals to swell and the batter to stabilize, preventing early gelatinization.
  2. 2Heat a smooth, perfectly clean non-stick or seasoned cast surface (a large flat pan, marble slab, or commercial rice-paper drum) to 90–100 °C.   3. 3Pour a small amount of batter (roughly 20–25 g) onto the hot surface. Rice starch absorbs water and swells irreversibly above ~65 °C, forming a semi-translucent gel network. This is the structural basis of the sheet — it is not a protein network like a dough but a starch-set film.

Batter Rheology Control

The batter must be fluid enough to self-level but not so thin it tears. The warm-water dilution is the primary control lever; resting the batter also adjusts viscosity.

Even Heat Distribution

Hot spots on the cooking surface cause uneven gelatinization: under-set areas remain opaque and tear easily; over-set areas become brittle.

Humidity Management During Cooking

Steam in the covered environment prevents the surface from drying before gelatinization completes. In low-humidity environments, edges dry and curl prematurely, making peeling difficult.

Rice paper is toasted directly over charcoal or an open flame until blistered and crisp. Eaten with scallion oil, dried shrimp, and roasted peanuts. The dry sheet is brittle and the char adds smokiness.

Guo pi (锅贴皮)China (Northern provinces, Shandong, Hebei)

Thicker version with 8–10% tapioca-starch and higher hydration. More opaque and much more pliable; designed to be folded and pleated tightly for pan-fried dumplings without tearing.

Bánh tráng tômVietnam

Rice paper infused with shrimp powder and annatto oil before sheeting. The sheet is slightly orange, aromatic, and used for fresh spring rolls to add seafood flavor directly.

Bánh tráng nếpVietnam (southern)

Made from glutinous rice flour (nếp), yielding a chewier, more opaque sheet with higher elasticity. Used for fresh rolls where structural integrity under filling weight is paramount.

Troubleshooting

Sheet tears when peeled

Insufficient gelatinization (surface too cool, or cooking time too short). The starch matrix has not fully set and lacks cohesion.Increase surface temperature to 95–100 °C. Sheet is brittle and cracks when softened for rolling
