Roux
Roux · A cooked mixture of fat and flour in equal proportions by weight, used as the primary thickening agent for sauces, soups, and stews. The roux gelatinizes the flour's starch, trapping liquid and providing body without flavoring the dish — or, when cooked longer, contributing deep nutty flavor itself.

The formula
1:1 fat : flour

Troubleshooting
Sauce has raw flour taste
Roux was not cooked long enough before liquid was added, or sauce was not simmered long enough after thickening → Simmer the finished sauce for an additional 15–20 minutes, stirring frequently. This will not fix a severely undercooked roux, but will rescue a mildly raw‑tasting sauce.
Sauce is lumpy despite thorough whisking
