Royal Icing
Glace Royale · A glossy, hard-drying sugar glaze made from powdered sugar and egg whites (or meringue powder), used to decorate biscuits, cakes and piped ornamental work. Its defining property is a fluid-to-plastic consistency range controlled by hydration alone — no fat, no heat, no leavening. When fully set it forms a porcelain-like shell impervious to humidity.

The formula
3:1 powdered sugar : egg white (by weight)
Scaling example: 300 g powdered sugar + 100 g egg white (≈ 2 large whites) makes ≈ 400 g stiff-peak icing. Thin to flooding consistency with 5–15% additional liquid. Always weigh — volume measurements of powdered sugar are unreliable.
Identity
- Contains no fat — the only major icing without butter, cream or shortening
- Dries hard and glossy solely through protein coagulation and sugar crystallisation
- Consistency is controlled by water ratio alone; no heat required
- Protein structure (egg white) gives initial structure; fine sugar crystals give final hardness
- Sets by evaporation, not by chemical reaction or heat
Ingredients

Method
- 1Sieve the powdered sugar twice into a large bowl to remove all lumps and cornflour agglomerates.Lumps will clog piping nozzles and produce rough, pitted surfaces on the finished icing.
- 2Add the egg white (or reconstituted meringue powder) to the sugar and combine with a wooden spoon or silicone spatula — no mixer yet.Initial hand mixing prevents incorporation of excess air before the structure is established. Heavy air incorporation makes icing brittle and changes set density.
- 3Beat at low speed with a stand mixer for 2–3 minutes until the mixture is smooth, glossy, and holds a sharp peak. It should be the consistency of thick toothpaste.Mechanical aeration develops the protein network (ovalbumin, ovomucin) into a stable foam that supports piping without slumping. Overbeating introduces large bubbles.
- 4To test consistency: lift the beater — a peak should stand straight for 1–2 seconds before curling. For flooding: stir in water 5–15% of total weight dropwise until the icing 'floods' back flat in 5–10 seconds when disturbed.The peak test confirms adequate protein network. The flood test ensures the icing is fluid enough to self-level without being so thin it bleeds beyond edges.
- 5Cover the surface directly with plastic wrap (press it onto the icing) and rest at room temperature for 5–10 minutes before use.This allows air bubbles introduced during mixing to rise and burst; any remaining micro-bubbles will cause pinholes in fine piped lines.
- 6Use immediately or store in an airtight container. To keep usable for several hours, re-stir briefly; to restore after hardening, add a tiny amount of water and re-beat.Royal icing skins over and hardens rapidly on exposure to air. Re-hydrating restores workability because the protein matrix has not yet fully cross-linked.
Techniques that matter
Piping (stiff consistency)
Royal icing at stiff peak holds a sharp shape, allowing fine line work, borders, lettering, and structural decorations. The protein foam is shear-thinning and flows under pressure but rebounds when pressure stops.
Flooding
Thinned royal icing poured or pipped onto a surface self-levels to create a smooth, glassy coat. Surface tension of the sugar solution and the speed of setting (controlled by room humidity) determine flow behaviour.
Royal icing transfer method
Piped outline-and-filling work where an outline is drawn first (stiff icing) and flooding follows, creating compartments for multicolour work that remain distinct as they set.

Meringue Powder Royal IcingCommercial/pandemic kitchen use
Substitute 3 tbsp meringue powder + 45 ml warm water for each 100 g egg white. Equivalent structure, slightly increased dried-storage stability. Some find it slightly more tender when set.
Gum Tragacanth Royal IcingBritish tradition
Add ½–1 tsp gum tragacanth per 500 g sugar to produce a more elastic, flexible set icing suitable for modelling flowers that can be bent without snapping.
Glace Royale au Blanc MontéFrench classical
Italian method: whip warm syrup (30°Brix) into stiffly beaten egg white, then add sugar. Produces a smoother, more stable icing less prone to weeping in humid conditions.
Piping Consistency VariationAmerican wedding cake tradition
Stiff peak is used for all work including flooding; consistency is adjusted with water in 5% increments. Humidity-controlled rooms (below 60% RH) are considered essential for proper set.

Troubleshooting
Pinholes and tiny craters in set icing
Air bubbles incorporated during mixing, or wet surface on the baked base → Rest the mixed icing covered for 10 minutes before use; ensure biscuit surface is completely cool and dry. Tap the filled piping bag gently on the bench to bring bubbles to the surface.
Icing stays soft and tacky for hours
High room humidity (above 70%); insufficient sugar-to-protein ratio; too much water added → Move work to an air-conditioned or dehumidified room below 60% RH. Add more powdered sugar to stiffen. Commercial food-grade silica gel packets near stored work accelerate setting.
Hard, brittle set with visible cracks
Too much powdered sugar relative to liquid; under-mixing so protein network is uneven; icing applied too thickly → Follow the 3:1 ratio precisely. Beat until fully homogeneous. Apply in two thin coats rather than one thick coat, allowing the first to skin over before the second.
Bleeding (colours run into one another)
Adjacent colours set at different rates; one is still fluid while the other has skinned; inadequate outlining → Ensure outline is fully set before flooding adjacent compartments. Add cream of tartar (½ tsp per 300 g) to equalise setting speed. Work in a low-humidity environment.
