Sagol ox-bone broth
사골 육수 · A classical Korean long-cooked stock made from beef knee bones (sagol) and associated cartilage-rich joints, producing a rich, milky-white broth with deep umami and a silky mouthfeel derived from dissolved gelatin. Unlike Western-style brown stocks, sagol is parboiled first to remove impurities, then simmered at a bare whisper for 8–12 hours to coax collagen and glycosaminoglycans into solution without browning. It is the foundational liquid for Korean soups, noodle dishes, and ceremonial hangover soups (haejangguk).

The formula
1 kg beef knee/knuckle bones (with cartilage) : 2 L cold water → 1.4–1.6 L finished broth
The 2:1 water-to-bone ratio by mass is the cardinal ratio for sagol. Reduce ratio to 1.5 L water per 1 kg bones for a thicker, more gelatinous stock used as a sauce base. Never exceed 2.5 L water per 1 kg bones or the broth will be thin and watery. Bones must be completely submerged. Scum and fat removal at each stage maintains clarity and clean flavor.
Identity
- Made exclusively from beef knee and knuckle bones — the sagol, which are dense with cartilage and epiphyseal cartilage
- Parboiled (chonggyeol) before the main simmer to purge blood, protein scum, and impurities — never started in cold water directly

Method
- 1Clean the bones thoroughly under cold running water, scrubbing with a stiff brush to remove loose tissue and blood residue.Residual blood and tissue are the primary sources of off-flavors (metallic, gamey, sour) in the finished broth. Clean bones reduce parboil time needed.
- 2Place bones in a large pot, cover with cold water by 5 cm, bring to a full boil over high heat, and boil vigorously for 10–15 minutes.Chonggyeol (parboiling) denatures and precipitates myoglobin, blood proteins, and marrow lipids to the surface as grey scum. Boiling, not gentle simmering, is required at this stage to generate sufficient convection to lift impurities.
- 3Drain the bones completely. Rinse the pot. Rinse each bone under hot running water, scrubbing any remaining grey scum from the surfaces.The first boil water contains all the purged impurities and is discarded entirely. Any residue left on bones will re-dissolve during the long simmer and cloud the broth.
- 4Return cleaned bones to the clean pot. Add fresh cold water (2 L per 1 kg bones), aromatics (radish, onion, ginger, garlic), and salt. Bring to a gentle simmer over medium heat — small, infrequent bubbles breaking the surface, not a rolling boil.Gentle heat (80–90 °C) prevents turbulence that would emulsify fat droplets into the liquid, keeping the broth clear rather than greasy. It also allows slow, complete extraction of collagen without gelatin breakdown products that cause bitterness at high heat.
- 5Skim any foam or fat that rises during the first 30 minutes of the main simmer. Partially cover the pot and maintain at a bare simmer for 8–12 hours.Continuous skimming removes residual proteins and emulsified lipids. The long duration (minimum 8 hours) is non-negotiable: collagen hydrolysis into gelatin requires sustained moist heat. Cartilage at the joint surfaces needs the full time window to fully dissolve and release glycosaminoglycans (chondroitin sulfate, glucosamine) that give sagol its characteristic silky body.
- 6Strain through a fine-mesh sieve lined with dampened cheesecloth. Discard solids. Cool the broth rapidly in an ice bath or by transferring to shallow containers.Straining removes bone fragments, cartilage shards, and aromatics. Rapid cooling in the danger zone (60–4 °C within 2 hours) is essential for food safety. The strained broth can be refrigerated; fat will solidify on the surface and can be removed as a protective seal.
Techniques that matter
Chonggyeol (청결) — parboiling and purging
The fundamental cleaning step unique to East Asian bone stocks. Boiling expels blood and protein from marrow cavities before the long gentle simmer. Skipping this step produces a brown, cloudy, gamey broth.
Bare simmer (약미음)
Keeping the broth below a full boil preserves the milky-white color, prevents fat emulsification into the liquid, and allows slow collagen dissolution rather than rapid extraction followed by thermal degradation.
Collagen hydrolysis
At sustained 80–90 °C, type II collagen in cartilage and type I collagen in tendons hydrolyze into gelatin over 4–8 hours. The fully hydrolyzed stock sets to a trembling gel when chilled — the hallmark of a properly made sagol.
Degreasing
Removing solidified fat from the surface before refrigeration prevents rancidity and flavor degradation during storage. The fat cap also insulates the broth, slowing cooling in the center.
Variations & derivatives
Sagol-gook (사골국)Korea
The soup itself: sagol broth seasoned with doenjang (fermented soybean paste), soy sauce, and green onion. Garnished with thinly sliced beef and steamed egg. A hangover cure and everyday comfort food.
Gukbap (국밥) baseKorea
Sagol broth used as the liquid for Korean rice soups, providing unctuous body and deep savoriness beyond what water or lighter stocks can offer.
Kalguksu baseKorea
Sagol broth serves as the neutral savory cooking liquid for hand-cut noodle soups, where its body and depth compensate for the short cooking time of the noodles.
Haejangguk baseKorea
The ceremonial hangover soup. Sagol broth is the vehicle for dried pollock (buyeo) and vegetables; the broth must be rich enough to coat the stomach lining.
Ox-tail stockWestern (Korean fusion)
A richer variation: replacing 30% of knee bones with oxtail adds gelatin plus intramuscular fat, producing a darker, more flavorful broth used in fusion sauces.

Troubleshooting
Broth is grey or murky rather than milky white
Bones were not parboiled sufficiently, or the main simmer was too vigorous, causing fat emulsification and protein turbulence. → For the next batch: parboil until no grey scum rises (15+ minutes at full boil), then maintain at 80–90 °C. To rescue a murky batch: pass through a fine-mesh strainer with damp cheesecloth and simmer gently for 30 more minutes uncovered.
Broth has a gamey, metallic, or sour off-flavor
Insufficient parboiling, dirty bones with residual blood in marrow cavities, or bones from old or improperly bled animals. → Use fresher bones. Crack bones to expose marrow and blanch in boiling salted water for 20 minutes, changing water once. Add 1 thick slice of Korean radish during the main simmer — it absorbs off-flavors.
Broth does not set to a gel when chilled
Insufficient collagen available (wrong bone type) or insufficient cooking time (less than 6 hours at proper temperature). → Ensure at least 30% of bone surface area is cartilage (knee joint surfaces). Extend cooking to 12+ hours. Add a pork trotter or two for additional type I collagen. Test: 1 tablespoon of broth placed in a cold bowl should gel within 10 minutes in the refrigerator.
Broth is too fatty
Excess marrow fat released from cracked bones or excessive heat causing fat emulsification. → Fat floats and oxidizes during storage, causing rancidity and a greasy mouthfeel. Degrease the cooled broth by skimming the solid fat layer before storing. For a lighter stock, blanch the cracked bones for 5 minutes in boiling water and discard that liquid before proceeding.
